BAINGAN BHARTA
Preparation time 10 minutes
Cooking time 20-25 minutes
Serving 2-4
Ingredients
For Roasting
3 no medium size Eggplant, बैंगन
9-12 Garlic cloves, लहसुन
2 Green chillies, हरी मिर्च
1 tsp Mustard oil to brush, सरसो का तेल
For Ginger Garlic Paste
1 inch Ginger, slice, अदरक
2 Green chillies, हरी मिर्च
4-5 Garlic cloves, लहसुन
Salt to taste, नमक स्वादअनुसार
For Tempering
2 tbsp Mustard oil, सरसो का तेल
1 tsp Cumin seeds, जीरा
Prepared Ginger Garlic paste
3 large Onions, chopped, प्याज
1 tsp Turmeric powder, हल्दी पाउडर
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tsp Coriander powder, धनिया पाउडर
Roasted mashed eggplant, मसला हुआ भुना बैगन
½ Raw mango, chopped, कच्चा आम
Salt to taste, नमक स्वादअनुसार
2 tbsp Coriander leaves, chopped, धनिया पत्ता
2 tbsp Curd, beaten, दही
For Garnish
Raw mango, julienne, कच्चा आम
Curd, दही
Process
For Roasting Baingan
Make a slit in eggplant and stuff with garlic cloves and green chilli.
Brush eggplant with mustard oil and roast until it is cooked
Remove from flame, peel, mash and keep it aside.
For Ginger Garlic Paste
In a mortar pestle, add ginger, green chilli, garlic cloves, salt to taste and make a smooth paste out of it.
For Tempering
In a kadai, heat mustard oil once it's hot, add cumin seeds and let it splutter well.
Add prepared ginger garlic paste and saute it well.
Add onion and saute until translucent. Add turmeric powder, degi red chilli powder, coriander powder and saute for 2-3 minutes.
Add roasted mashed eggplant and mix everything well.
Cook on medium flame for 5 minutes. Add raw mango and mix it well.
Add salt to taste and saute for 2 more minutes.
Add coriander leaves and mix it well. Switch off the flame now, add curd and mix it well.
Garnish it with raw mango, curd and serve hot with roti.

Trying to spell the word with its sound is really a good ahabit and it also makes the excerise for his brain to make his spellings. Ishaan's brain is active he will take time now but later he is gonna be brilliant child. And next time please try using spring onion in baigan ka bhartha you will definitely love it. Yes, baigan tastes very good when you eat it with dahi or sour cream… first time I had it in Turkish Restaurant in Australia. Roasted baigan slices with sour cream. It was delicious 😋
