DABELI
Preparation time 25-30 minutes
Cooking time 5 minutes
Serving 4-5
Ingredients
For Dabeli Masala
½ cup Coriander seeds , धनिया के बीज
2 tbsp Cumin seeds , जीरा
1 tbsp Fennel seeds , सौंफ
4 no Black Cardamom , बड़ी इलायची
2 no Star anise , चक्र फूल
2-3 Clove , लौंग
10-15 Black Pepper cons , काली मिर्च के दाने
1 tbsp White Sesame seeds , सफेद तिल
2 inch Cinnamon stick , दालचीनी
2-3 Bay leaf , तेज पत्ता
2-3 Dry Kashmiri chilli ,broken in half , कश्मीरी लाल मिर्च
2 tsp Black salt , काला नमक
1 ½ tsp Degi red chilli powder , देगी लाल मिर्च पाउडर
¼ tsp Asafoetida , हिंग
⅓ cup Dry Coconut ,grated, सूखा नारियल
2 tbsp Peanut oil ,मूंगफली का तेल
2 tsp Sugar ,चीनी
For Red Garlic Chutney
10-12 Dry kashmiri red chilli , soaked , कश्मीरी लाल मिर्च
10-12 Garlic cloves , लहसुन
Salt to taste , नमक स्वादअनुसार
1 tsp Sugar , चीनी
½ tsp Degi red chilli powder , देगी लाल मिर्च पाउडर
2 tsp Peanut oil , मूंगफली का तेल
¼ cup Peanut , मूंगफली
For Masala Peanut
⅓ cup Roasted peanut , भुनी हुई मूंगफली
2 tbsp Dabeli masala , दाबेली मसाला
For Filing
3 no Boiled potatoes ,grated, उबला हुआ आलू
2 tsp Peanut oil , मूंगफली का तेल
2 tbsp Prepared dabeli masala , दाबेली मसाला
For Onion mixture
2 medium Onion ,roughly chopped , प्याज, कटा हुआ
1 Green chilli , chopped, हरी मिर्च, कटी हुई
1 tbsp Coriander leaves , chopped , धनिया पत्त कटा हुआ
1 tsp Lemon juice , निम्बू का रस
For Assembling
Tamarind chutney , इमली की चटनी
Red garlic chutney , लाल लहसुन की चटनी
Nylon sev , नायलॉन सेव
Pomegranate pearl , अनार के दाने
Butter , मक्खन
2-4 Pav , पाव
Process
For Dabeli masala
In a pan, add coriander seeds, cumin seeds, fennel seeds, black cardamom, star anise, cloves, black pepper cons.
White sesame seeds, cinnamon stick, bay leaf, dry kashmiri chilli, black salt, degi red chilli powder and asafoetida. Dry roast on low flame until the spices turn aromatic.
Transfer it into a bowl. In the same pan dry roast the grated coconut and transfer it into the same bowl. Let it cool down,
Transfer the mixture into the grinder and grind it into fine powder.
Transfer the grinded masala into a bowl, add peanut oil, sugar and mix well. Keep it aside for further use .
For Red chutney
In a bowl, add soaked kashmiri red chilli, garlic cloves, salt to taste, sugar, degi red chilli powder, peanut oil, peanuts.
Transfer the mixture into a grinder add little water and grind it into a smooth paste.
Transfer the chutney into a bowl and keep it aside for further use.
For Masala Peanut
In a bowl, add roasted peanut, prepared dabeli masala and mix well. Keep it aside for further use.
For Filling
In a non stick pan, add peanut oil, prepared dabeli masala mix well.
Add grated potatoes, little water and cook on medium flame until the masala mix completely.
Transfer the mixture into a parat and let it come to room temperature.
On top of the mixture sprinkle prepared masala peanut, chopped onion mixture, nylon sev and pomegranate pearl.
For Onion mixture
In a bowl, add roughly chopped onion, green chilli, coriander leaves mix well.
Add lime juice and mix well. Keep it aside for further use.
For Assembling
Firstly, slit the pav in the center and spread tamarind chutney one side and on another side red garlic chutney.
Stuff the prepared aloo mixture into the pav.
Roll the dabeli into sev.
In a non stick pan, add butter and toast the pav from both the sides.
Make sure to turn slightly golden brown.
Garnish it with coriander spring and pomegranate pearl serve hot.

I am from “Mandvi” Kutch and i must say Jayeshbhai makes hell of a Dabeli ! If anyone is visiting Mandvi, His shop is in front of Bus Station (not promoting him but in case anyone is visiting and wants to know the location). Also, not to forget Ranveer’s effort for finding out origin of a recipe and maintaining authenticity of taste. Kudos to you !

I'm Kutchi, but born & brought up in Mumbai. 1st time, we ate Dabeli in Mumbai, costing Rs1 and later Rs. 1.25 etc. It was called "Double Roti" too in those days. Its good that you didn't use this name, else your initial dialogue could have been "iss recipe me chahiye ....double Roti, yane 2 Roti...… " :) With that name, even we were surprised to see, that it used Pav and still named differently. In childhood, in summer vacation, we had gone to Ghadhshisha, Kutchh, to one of our relative's home and their son, Prabhubhai was making Dabeli… we were helping him in all the initial preparations in the mornings....This video reminded of all...and it was a daily routine. I was going with Prabhubhai to the fixed sell location...after setting up everything, he was preparing Dabelis and I used to be the 1st free customer everyday to eat his 1st Dabeli...keeping the other customer's on a little wait hehe... and depending upon the mood, I was eating at least 1-2 Dabelis, sometimes 3 too.... hahaha. Ranveer, I casually saw one of your recipe videos and found it more of story telling and knowledge sharing. Today is 3rd day, I have subscribed your channel....I am watching your videos instead of...b'wood stuff ... the reason is obvious.... Your videos are entertaining as well as they help to know more about interesting recipes …. Thank you for this "Kutchhi Dabeli" feeling proud to be Kutchhi lady :)

Being a native of mandvi couple of tricks to ensure your dabeli is never dry. Ensure to use potatoes gravy to keep the moisture intact. The video showing a dabeli stall also has gravy at display. the Masala peanuts ideally are made with heated oil so it stays for long. Dabeli was never roasted initially when it spread to other places people innovated. The original flavours are enjoyed raw. Always slice pav from corner and keep only 2 sides open at an angle of 90 degrees which helps in stuffing dabeli easily. Potatoes stuffing ideally is best when potatoes are manually mashed so you get the chunks when eating. You get special dabeli pav in Mumbai which is slightly round in shape

I used to have it when was in Bhuj as my dad is in Indian airforce.... I had it for the last time in 2012 , I was 14 then.. and I can say that it's the best best best street food that I ever had! I have been to many places due to my dad's posting and tried many local food items but nothing could replace Dabeli... Dabeli can never be an OLD FLAME, it will always be my only love 😊.

I personally have visited and it's just wonderful.... Kutch has different food tradition than Other part of Gujarat. This is actually not Gujarati dish. It's Kutchi Dish as Kutchi people are much more different than Gujarati people. Once again wonderful to see real history at this kitchen.

Being a gujju from Ahmedabad I always knew and loved Dabeli, we know it as "Katchhi Dabeli". And after moving to Sydney, I tried making it at home a couple of times. you know, we don't get it on every street corner here, Sigh... I messed up the receipe every single time and eventually gave it up. After watching this video, I exactly know, where and how many things I did wrong. Thank you for sharing it, this will become staple in my routine for sure. Also, did I mention that I binged watch your videos on youtube, the way I had binged watch "Game of thrones" once upon a time. You are FAB!! ❤❤❤

My native is Kutchh, am I am here in mumbai. Every year I try to pay a visit to admire and cherish the native. I still remember my childhood days when dad used to take me out for a tour and first time I had Dabeli. And today, all thanks to you for bringing this again to our plate. I literally made this yesterday and had it with my parents and recollected good old days of my childhood. Much love, Ranveer!❤️💫

Mouthwatering! I remember once I traveled between Ahmedabad to Vapi in a morning Train. I used get down at every station and buy one dabeli and enjoy my journey eating in the chair car. Awesome memories! Thank you!

I am from Kutch and the main reason behind the invention of dabeli was mandvi being a famous place for ship building workers used to work for days near the port and due to this it was difficult for them to carry roti sabji in containers, hence this gave the idea as one can directly put dabeli masala (mashed potato) into pav and have it all together........ Lots of love from Kutch ❤️❤️

My daughter and me are big foodies and try to prepare recipes at home. For this, KZbin is a go to place for reference. What I'm amazed about all these chefs is the positivity, enthusiasm and energy with which they prepare food. There is a lot of respect for food and they explain everything so well. Hats off to Ranveer Brar and all the chefs who've made life flavourful.

I am Kutchhi myself. One thing I want to clarify that kutch despite being a part of Gujarat in today's time but actually historically kutch was the southern most part of Sindh province. And the language that we speak Kutchi is actually a dialect of Sindhi language only ! Nice Recipe btw :)👍

Being born & raised in Mumbai, Dabeli has already been one of my favourite snack & knew that it was a gujrati dish, but never know the entire history. Watching this has raised my level of affection & respect for this dish!

We tried this recipe and it is so perfect! I'm from Pune and the Deccan dabeli was my favorite. Never could find that taste after I shifted to Bangalore. The taste of dabeli we made at home was exactly like the Deccan one Can't thank you enough!
