GOBI PARATHA
Preparation time 10 minutes
Cooking time 20-25 minutes
Serve 2
Ingredients
For Dough
2 cups Whole wheat flour, गेहूं का आटा
Salt to taste, नमक स्वादअनुसार
2 tsp Ghee, घी
¼ tsp Carom seeds, अजवाइन
Water as required, पानी
1 tsp Oil (after kneading) तेल
For Cauliflower Stuffing
1 medium Cauliflower, grated, फूलगोभी
Salt to taste, नमक स्वादअनुसार
4 no. Green chillies (less spicy & chopped) हरी मिर्च
1 inch Ginger (peeled & finely chopped) अदरक
1 ½ tbsp Coriander leaves, finely chopped, धनिया पत्ता
1 ½ tsp Prepared Masala, तैयार किया हुआ मसाला
For Masala
2 tsp Cumin seeds, जीरा
1 tsp Coriander seeds, धनिया के बीज
1 tsp Black peppercorns, काली मिर्च के दाने
For Butter Mixture
½ inch Ginger (peeled & roughly sliced) अदरक
3 no. Green chillies, हरी मिर्च
⅓ cup fresh Coriander leaves, धनिया पत्ता
Salt to taste, नमक स्वादअनुसार
½ cup Butter, cubed, मक्खन
Other Ingredients
1-2 tbsp Ghee ( for roasting) घी
For Assembling
Curd, beaten, दही
Pickle, अचार
Onion, प्याज
Green chilli, हरी मिर्च
Process
For Dough
In a bowl, add whole wheat flour, salt to taste, ghee, carom seeds, water as required and knead it into a semi soft dough.
Apply oil and keep it aside for resting.
For Cauliflower Stuffing
In a bowl, add grated cauliflower, salt to taste and leave it for 5-10 minutes.
Squeeze out the excess water from the cauliflower and transfer it to a bowl.
In the same bowl, add green chillies, ginger, coriander leaves, prepared masala and mix it well.
Keep it aside for further use.
For Masala
In a pan, add cumin seeds, coriander seeds, black peppercorns and dry roast it on medium flame for 2-4 minutes.
Transfer it to a mortar pestle and grind it coarsely.
For Gobi Paratha
Divide the dough in equal portions and roll it out with the help of a rolling pin.
Add the prepared stuffing in the center, close it with another roti and seal the edges.
In a tawa, heat ghee, place the prepared paratha and roast it on both sides until golden in color.
Transfer it to a serving dish and apply some prepared butter.
Serve hot with prepared butter mixture, curd, pickle, onion and green chili.
For Butter Mixture
In a mortar pestle, add ginger, green chillies, fresh coriander leaves, salt to taste and grind it coarsely.
In a bowl, add butter, add the prepared mixture and mix it well.
Keep it aside for further use.

Chef, I tried this recipe last night must say it was the tastiest gobhi Paratha I ever had,it didn't break while rolling,adding salt n squeezing out extra moisture was the game changer, thankyou so much.

कुछ ज़्यादा ही इरिटेटिंग लेवल पे पंजाबी पंजाबी कर रहा है Brar😂 मैं पंजाब में रहता हूँ पंजाबी कोई ऐसे परोठा नहीं बनाते सीधे नुक्कर ढाबा या कटानी ढाबे से ऑर्डर कर लेते है 😅 और वहाँ सारे हिमाचल के कारीगर बनाते है शानदार परोठे

रणवीर जी मुम्बई में जो मसाले दार बिरयानी शादी में बनती है जिसमे आलू भी पड़ता है उसे बनाइये मैंने बांद्रा वेस्ट के सामने एक एक्साइज कमिश्नर कि लड़की की शादी में खाई थी जिसमे चावल से अधिक मटन था।

किसान लोग का खर्चा बड़ी बारो माह और काम खातम नै होता है तलाब ,कुंवा सब भरा नै है आजकल कैलेमैकस चेंज हो रहा है हर साल धान रोपने समय पानी नै आता है कैसे गेहुं आलु मटर लशन सब लगेगा नदी नहर है तो वहां काम चलता है अन्यथा न हर चिज़ भगवान बरसा है मुझे ना बड़ी आछा लगता है पटाना दिन भर गडन गडन करते हैं घर मे ओर पारब ऊपर से खर्चा में खरचा|

Hamari Nani daadi ne kabhi gobhi ko kaddu Kass nahiñ Kiya.....always cut the flower portion very finely and discard the rest....uska taste hi kuch aur hota hai

I m your big fan and watch your all recepies usually while having my lunch , as your prrog is much more than a recepie, it is an entertainment show .Being Punjabi we also have usually gobhi pranthas on Sunday breakfast . Butter with ginger chilly dhania paste is so tempting 😂 Okay ,I try gobhi without squeezing sometimes as I mix salt slowly for two stuffing and pranthas are with more crunch and I add red chopped cabbage also for more crunchiness ( but rthat red cabbage I squeeze after putting salt separately )😅

parotha, not paratha, chewing and swallowing cycle is only 3-5 chews!.... on average, and you are saying add more butter!!there is an art of eating butter not just cooking it. buttery foods need more teeth exercise....as in 40-50 times chewing as long as the saliva completely wets it. otherwise the load of the digesting work, like you mentioned so lightly, is taken up by estomaake, and gastritis startyedd. fat absorption issue started, heart attack precursor started dear tall punjabbi birather. the water required to eat that dry crust of a 'parrothha', already saliva secretion is stressed then there needs to be more water in the saliva too, add more digestion stress, so instead of chaach (water aid-punjabbi style), you add more butter!!!with all dry ingredients!. ok birather i will delete the comment once u fins a healthy footnote meaningful n give a reply/like....

I love your food videos but I genuinely think you should visit punjabi home in Punjab to see actual paronthi we crave for (genuinely craving for it rn). This is definitely not that paronthi which used to be my only motivation to wake up in the morning for 29 years at home.
