DAL MEAT - Some recipes linger on in our memory forever. Dal Meat/Gosht is one such recipe for me. In this video, I attempt to recreate a recipe that I had as a kid and hope, that I have done justice to it :)

DAL MEAT
Preparation time 10 minutes
Cooking time 30-35 minutes
Serve 2-4
Ingredients
For Marination
700 gms Mutton (with bones) मटन
2-3 tbsp Curd, beaten, दही
½ Onion, slice, प्याज
Prepared Ginger Garlic Paste, तैयार किया हुआ अदरक लहसुन का पेस्ट
Salt to taste, नमक स्वादअनुसार
1 ½ tbsp Mustard oil, सरसों का तेल
For Ginger Garlic Paste
2 inch Ginger, roughly chopped, अदरक
6-8 Garlic cloves, लहसुन
2-3 Green chilli, हरी मिर्च
Salt to taste, नमक स्वादअनुसार
For Tempering
¼ cup Ghee, घी
2 ½ medium size Onion, slice, प्याज
Marinated Mutton, मैरीनेट किया हुआ मटन
2 Black cardamom, बड़ी इलायची
2 Bay leaf, तेजपत्ता
1 inch Cinnamon stick, दालचीनी
1 ½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
2-3 tbsp Coriander powder, धनिया पाउडर
200 gms Chana dal, soaked, washed, चना दाल
2 tbsp Ghee, घी
Water as required, पानी जरूरत अनुसार
Prepared Tadka, तैयार किया हुआ तड़का
½ cup Hot water, गर्म पानी
2 tbsp Coriander leaves, chopped, धनिया पत्ता
For Tadka
2-3 tbsp Ghee, घी
1 tsp Cumin seeds, जीरा
8-10 Black peppercorns, crushed, काली मिर्च के दाने
For Garnish
Coriander sprig, धनिया पत्ता
Green chilli, slit, हरी मिर्च
Lemon wedge, नींबू
½ inch Ginger, julienned, अदरक
Process
For Marination
In a bowl, add mutton with bones, curd, onion, prepared ginger garlic paste, salt to taste and mustard oil and marinate it well and keep it for 10-15 minutes.
For Ginger Garlic Paste
In a mortar pestle, add ginger, garlic cloves, green chilli, salt to taste and make a smooth paste of it.
For Tempering
In a large pot, add ghee once it is hot, add onion and saute until light golden brown in color.
Add marinated mutton and saute it well for 5 minutes. Add black cardamom, bay leaf, cinnamon stick.
Add degi red chilli powder, turmeric powder, coriander powder and saute it well.
Cook for 5 more minutes. Add soaked chana dal, ghee and saute it well.
Add water as required and mix everything well
Cover it with the lid and Cook till the mutton is completely cooked well.
Add prepared tadka, little hot water and mix it well.
Bring to a boil and simmer for 10 minutes
Add coriander leaves and mix well.
Garnish it with coriander sprig, green chilli, lemon wedge, ginger julienned.
Serve hot with paratha.
For Tadka
In a tadka pan, add ghee once it's hot, add cumin seeds, crushed black peppercorns and saute well.
Keep aside for further use.

Hello Chef Ranveer. This is Heraa from Lahore. Dal Gosht is still a staple in most our homes. We had it just a few days ago. Only over time due to weather changing and water changing it's mineral content, we also use Tomatoes sometimes in place of yoghurt now and go a bit tighter on the onion. It's fascinating how recipes travel and linger in the most unexpected places. Dal Gosht is one of the most common dishes in Pakistani home cuisine in general to date. But to see it have so much love from across the border, it's inspiring.

I also make the dal gosht exactly like this. I learnt it as a teenager growing up in Punjab from my friend's father. He used to make it every time he was visiting his family in Punjab. He himself used to live in Bombay. In fact this was the first mutton dish I learnt how to cook. The second was Murgh Musallam: my mom used to make a killer one.

This turned out so good, better than my expectations. I think the freshly pounded ginger garlic and addition of mustard oil made a real difference.

The Recipe was Really Good but aapne itne baar bol diya ki iss Chhez ki monopoly hai uss cheez ki monopoly hai par monopoly ka matlab to ek hi cheez hota hai to voh monopoly kaise hai. Jokes aside, the recipe was great, but the question is that can we use any other meat cut instead of shoulder.??

Sir there are chefs who make recipes but you give us memories! Achcha tha na 🤔! Seriously I followed you religiously as you give us the authentic Indian recipes ! I was born in Lucknow and studied in Hyderabad and now living in Delhi and am a Bengali by lineage, so my love of food and culture is deep! I really like your detailed recipes that had been created in ancient times and you are passing them on to the next generations! Can’t thank you enough, your Nihari recipe I made was to die for ! .😊😊 Ranbir sir... super👌👌👌, In simple and straightforward language we present the nature of the consonant. The main thing is that the names of the spices used in the dish are exactly (main). Therefore, they are easily understood by the common people. I am a eater myself. The day I take a day off from work, I am in the kitchen myself. And does a variety of foods because I love it. I tried this today & it Came out as a perfect dish. We in Odisha cook a variant of it with fish head( preferably rohu or even bhekti would do) instead of meat & it's called mudhi ghanta/ chincheda. It will have a different tadka comprising of hing, garlic,ginger & green chilli & that is one of favourite fish dishes. This recipe reminded me of mudhi ghanta & now I am almost certain of cooking it next week 😜. I hope RB tries our dish which is made in most marriages in eastern Odisha.
