VEG THUKPA
Preparation time 10 minutes
Cooking time 20-25 minutes
Serve 2-4
Ingredients
For Noodles Dough
2 cups whole Wheat flour, गेहूं का आटा
Salt to taste, नमक स्वादअनुसार
⅓ cup Water, पानी
1 ½ tsp Oil (after kneading) तेल
For Thukpa Paste
1 ½ inch Ginger (peeled & roughly chopped) अदरक
1 ½ large Onions, roughly chopped, प्याज
2 medium Tomato, diced, टमाटर
2 tbsp Tender coriander stems, roughly chopped, धनिया के डंठल
5-6 no. fresh Red chillies, ताज़ा लाल मिर्च
Salt to taste, नमक स्वादअनुसार
2 tsp Sesame oil, तिल का तेल
Other Ingredients
1-2 tbsp Flour (for dusting) मैदा
For Thukpa
2 tsp Oil, तेल
Prepared Paste, तैयार किया हुआ पेस्ट
10-12 no. Mushrooms, sliced, मशरूम
2 medium Carrot, julienned, गाजर
½ small Cabbage, julienned, पत्ता गोभी
4-5 cups Vegetable stock, वेजिटेबल स्टॉक
Prepared fresh Noodles, तैयार किया हुआ फ्रेश नूडल्स
8-10 no. French beans, diagonally cut, फ्रेंच बींस
¼ cup Spring onion, chopped, प्याज़ पत्ता
½ tsp Vinegar, सिरका
2 tsp Sesame oil, तिल का तेल
For Boiling Noodles
1 ltr Water, पानी
Salt to taste, नमक स्वादअनुसार
1 pkt Noodles, नूडल्स
1 tsp Oil, तेल
For Chili Oil
⅓ cup Oil, तेल
3-4 no. Garlic cloves, roughly crushed, लहसुन
2 tsp Toasted white Sesame seeds, सफेद तिल
2 tbsp Chili flakes, कुटी हुई लाल मिर्च
1 tbsp Light soy sauce, सोया सॉस
For Assembling
Cooked Thukpa, पका हुआ थुकपा
Boiled Noodles, उबले हुए नूडल्स
Prepared Chili Garlic Oil, तैयार किया हुआ चिली आयल
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Noodles Dough
In a bowl, add whole wheat flour, salt to taste, water and knead it into medium hard dough.
Apply oil and keep it aside for 10-15 minutes to rest.
Take a small amount of dough and make thin noodles or in any desired shape.
Dust it with some flour and keep it aise for further use.
For Thukpa paste
In a bowl, add ginger, onions, tomato, tender coriander stems, fresh red chilies, salt to taste and sesame oil.
Transfer it to a grinder jar and make a smooth paste.
Keep it aside for further use.
For Thukpa
In a wok, heat oil, add prepared thukpa paste and cook it for 4-5 minutes until thick or cooked well.
Add mushroom, carrots, cabbage and saute for a few minutes until half cooked.
Add vegetable stock and simmer it for a while.
Add prepared fresh noodles, french beans, spring onion, vinegar and let it boil for 5-6 minutes until cooked well.
Finish it with some sesame oil and transfer it to a serving dish.
Garnish it with boiled noodles, coriander sprig and prepared chili oil.
Serve hot.
For Boiling Noodles
In a pot, add water and get it to a roaring boil.
Add noodles and boil it for 5-6 minutes on high flames.
Transfer it to a tray, add oil and mix it well.
Keep it aside for further use.
For Chili Garlic Oil
In a pan, add oil, garlic cloves, toasted white sesame seeds, chili flakes and cook it for a minute.
Add soy sauce and mix it well.
Transfer it to a bowl and keep it aside for further use.

I'm from Ladakh and watching a Punjabi making our food is one of the most surprising experiences of my life. I never expected to find any tutorial for making thukpa especially by a Punjabi. This is an example of Unity in Diversity.

Well I'm from Nepal and u mentioned Timmur which taste very peppery and smells nice and we nepali mostly used in chutney and in nepal thukpa mostly eaten in winter and in monsoon when temperature drops. There r some basic ingredients which is used in thukpa dish such as chilly oil hot chilly paste with szechuan pepper and toasted garlic paste which enhance the flavour in different level. Ranveer sir ney banaye haar receipe ka bataney ka andaaz different level ka hai jo mujhe bahot bahot hi pasand aata hey.

Finally!!! Thank you so much for creating the Tibetan version of thukpa. Most of the time on KZbin I only see the Nepali version. In UK i grew up eating this a lot since their is alot of Tibetan settlement. Even though alot of nepali population is here too but in market you see the Tibetan version mostly. ❤❤❤❤

Thanks for mentioning that there are different versions. I had learnt from a Tibetian(Lama) and he did the noodles then and there and made Thukpa for us and we both were blown away by the simple taste of it and it was so warmn on that cold day. Awesome Chef......accha baja lete ho!

छत्तीसगढ़ के हिल स्टेशन मैनपाट में 1961 में तिब्बतियों को बसाया गया था वो अपने साथ तिब्बती खाना भी लेकर आए वहाँ कई तिब्बती रेस्टोरेंट हैं।वहाँ मैंने पहली बार थुपका और भाखलेफ खाया था & it was so delicious ❤❤❤

Hi Ranveer , Ritvik here although I live in Russia nowadays but I have recently been craving some Himachali cuisine I would love to see your twist on some dishes from Himachal Pradesh. Another idea I thought would be great was if you were to travel all over India and explore different cuisines from different states it would be pretty incredible……well take my ideas with a grain of salt 😂 hoping to see some incredible dishes in the future from you.

Kafi easy hain.. ye meri special dish hain jo main order karti hoon thandi ke mausam mein aur kabhi kabhi apne friend ya cousins ke sath jati hoon khane ke liye. They were asking me to learn thia recipe and pata nhi tha ye aphi ke channel mein milne wali hain.

ये डिश पहली बार मुझे मेरे जीजा ने खिलाई थी, देहरदून के भाऊवाला के न्यू भाऊवाला रेस्टोरेंट में, ये डिश बहुत ज्यादा चटपटी, तीखी और मसालेदार होती है, खाने के बाद आंख, नाक सब जगह से पानी आने लगता है, जो लोग पहली बार खाए वो हाफ प्लेट ही ऑर्डर करे क्योंकि कई लोग जो पहली बार खा रहे है वो आधा खा कर ही छोड़ देते है, इतनी चटपटी होती है ये डिश, सादा खाना खाने वाले इस डिश से दूर ही रहे, वैसे ये हिमाचल प्रदेश की डिश है, मगर उत्तराखंड में भी बहुत फेमस है, पहाड़ों में तो इस डिश को सभी लोग जानते होंगे, क्योंकि थुपका खाने का असली मजा ठंड के मौसम में ही आता है, और पहाड़ी इलाकों में तो साल भर ठंड पड़ती रहती है, कई लोग इसे थोपा भी बोलते है मगर इसका असली नाम थुपका ही है।

We have been having this for so many years. Once a week is compulsory. The thukpa you made is very similar to gya-thuk which is flat instead of the cylindrical shape like noodles. Gya-thuk if made properly is very delicious. Ranveer ji thanks for the recipe.

Mera ek friend hai...from kasol...usne mujhe banake khilaya tha chicken thukpa....it was awesome and he added some kind of herbs from Himachal...main naam vul Gaya but that was just yummm...he was working that time je marriot in bangalore

Sikkim main bahat he authentic Thukpa aur gyathuk milta hai khaney main lazeez hota hai… lekin No.1 Chef jab banata hai dekhney main maja aajata hai… Maja ayo yo style ko thukpa herera..ek palta Sikkim oani awnus hai ❤much love

Namaste from Atlanta, GA! This is my first time ever making your recipe and first time commenting here. While I’ve enjoyed watching many videos and saved a lot, today I decided to give Thukpa a try. It was a great success according to my son who is himself a great cook (scientist by day, foodie always lol) and my husband who’s also a great cook! Thank you for the perfect proportions and humorous way of sharing your passion for cooking. Wishing you all the success in your professional and personal life! PS: I had all the ingredients including sichuan peppers but I didn’t see where it was added 🤔

Loved the recipe . Especially our Nepali food have influence from India and Tibet we get to enjoy both flavors. When you made noodles I remembered my childhood too. On the day of Ekadashi we don’t eat rice and sewai was our food and we used to make ourselves at home. Thank you chef Randeep Brar for reminding childhood memories.

Dubai ki Garmi me garam garam Thukpa peeni or khane me b mazza aata hai chef G Pura pasina pasina ho jaye hai spicy ness se naak bhehne lagti hai but it's a some good experience. Thank you for sharing this amazing recipe
