I am vegan for sure but as a southern girl raised in Jackson, Mississippi here in America; the collard green is a staple in the Afro-American household, and it was very common to have this delicious side dish on the regular. Your Ugali is like our grits in the south and boy do we love em! I have never experienced eating goat. But in Mississippi it is common for people to enjoy eating many parts of the hog, cow, deer, rabbit, frog, racoon, alligator etc.. I now live far away from home and watching your show feels me with the comforts of home. Thanks for being great.

Hi, Lala. I'm a Mississippian too... from Jackson - but we lived and worked in Kenya for 15 years. When we lived in the very rural area of North Kitui District (Akamaba tribe) I would drive to Kyuso every Tuesday morning because the butcher would slaughter a goat, so we could have fresh meat (nyama sya mbuzi - goat meat) - living so far from Nairobi. Goat meat is DELICIOUS - not dissimilar to mutton (sheep). AND... the Kenyan's greeens - "sukuma wiki" in Swahili means "to stretch the week" because when meat and other veg was not available or affordable at the end of the week, it was collards that were used to "stretch the week." LOVE how bright, clever and resourceful the Kenyan people are! God bless! - Johnny & Becky now living in Western NC

I am congolese, I grew up eating ugali with greens and meat. This reminds me of my childhood. Now in Canada, failing to cook those delicious dishes but I will surely try this. Thanks for the great content.

Simple and straight forward. Kizungu mingi avoided...only issue - indicate time limits. Eg- fry for 20mins, boil for 40mins. Bake at this temp for 45 mins etc etc. ..

Chef Wainaina is so natural - very simple yet educative presentations. I am not a fun of cooking but looking at these videos, I keep learning new ideas. The way this goat was cooked is amazing - I have been boiling then frying - this was express but the goat came out looking tender and tasty. Sautering gave the golden colour... For the sukuma - I like the chopping style it made my day...😂😂😂 then when cooking that we should let the onions sweat. I already subscribed - want to see more of these. Keep up Chef!
