Well one of us brought only one very large suitcase for checked luggage and a carry on suitcase, and the other brought one large and one medium to be checked and a carry on suitcase as well. Most people pack up to what is allowed as free baggage on their flight, some packed really light, and some looked like they brought their whole house, so its up to you lol

Perhaps a stupid question,, but did EPIK pay for your flight? And what class? Economy? Were you allowed to upgrade to perhaps premium economy (By paying them a bit more?)

You have to buy your own flight and then after your first month teaching when you get your first paycheck you get a flight reimbursement which is a set amount and doesn't change whether you spent more or less on your actual flight

This might be a stupid question, but what do you do with the phone plan you have in the country you're coming from? I'll be teaching this September 2018, but I don't know what to do with my cellphone plan in Canada? Do I cancel it when I move to Korea?

Yeah we cancelled our American phone plans. Even if you have a contract it might be cheaper to buy out of your contract and cancel it instead of paying for phone plan that you can't use.

How many suitcases were you guys allowed to bring?

You can bring as many as you want to/pay for on your flight, however you will be responsible for carrying them at orientation and taking them to your apartment afterwards. I think most people brought a carry on size suitcase and an extra large suitcase, but some people had all three that come in a set of luggage (small, medium, and large plus another carry on bag). But you'll also want to keep in mind that most people here don't have large vehicles, so you won't know what type of transportation your coteacher will have to take you to your apartment.
