Sometimes if you're up a piece but your opponent offers a sacrifice, it's better to calculate (within your ability) and take it if it's unsound; removing pieces reduces opponent's counterplay. But, if you're not sure or can't calculate it, don't take the gifts. Or if you're down a pawn or two, becoming desperate and sacrificing (unsoundly) more pawns/pieces is bad (increases your deficit so even if your opponent blunders a piece, you're still lost).

I think you may be underestimating 400 elo players, I've seen 1200 elo players get thrashed by 400 elo players, done it before myself, if anything its just as difficult up there
