You should check out Wat Ban Den, outside of Chiang Mai-- it is gorgeous and most tourists don't know about it. When we went it was only locals.

Most tourists only see the artistic beauty that the creators have created in both places, the White Temple (Wat Rong Khun) and the Blue Temple (Wat Rong Suea Ten), but they do not understand the philosophical concepts of life that the artists have presented.

It is like an enchanted forest, surprised Lay has it on her bucket list though not the most well known sight seeing place? The cafe looks like it has nice food and well priced too. Places are empty due to not many tourists, too expensive for locals maybe? Plus locals will be working don't forget, they don't have your life to eat and drink what you want when you want.
