I’ve been thinking about gluten-free, vegan empanadas. I’m not vegan, but it appeals to me and it’s be good to have that recipe for my friends with different dietary needs. Maybe a firmer tofu or mushrooms. The dough would be the difficult part, without the elasticity of gluten to let me stretch the disks and close them up. Any ideas?
