Chicken and dumplings like Mama's, Georgia Southern cooking
DO YOU REMEMBER that good old southern cooking?
When I was growing up, my granny was my favorite cook. My mama was also a fantastic cook, but there was just something about being in granny’s kitchen. We all gathered around the table when we went to her house. I have made it easy for you to learn how to cook like my granny and mama did with cooking tutorials for every recipe in our cookbooks. You can see how to order these by visiting us on our website. Oh, and no difficult-to-find or crazy ingredients! Just simple ingredients and delicious food. I am a Southern girl born and raised in Collard Valley in Polk County, Georgia. We went to church on Sunday, school during the week, and the grocery store on Friday, and that was our life: no vacations, no camping, just plain old southern country people.
If you learn to cook like my mama and granny, you will become one of the best Southern cooks. Thank you so much for being a part of this dream of mine.
NOW FOR THIS FAMILY RECIPE:
Chicken & Dumplings
BOIL A YOUNG FRYER CHICKEN
1 1/2 TSP. SALT
1/2 TSP. PEPPER
1 CHICKEN BOUILLON KNORR OR 1 TBSP. GRANULES
2 STALKS OF CELERY
1 ONION CHOPPED
Boil chicken with salt, pepper, bouillon, celery and onion with breast down on medium/low for 1 hour. Take chicken out with two large spoons and place on platter. (Remove chicken from bones after it cools) discard bones and fat & celery from broth. Strain if desired.
MAKE 2 BATCHS OF DUMPLINGS (RECIPE PG.32)
2-10.5 OZ CANS OF CREAM OF CHICKEN
1 TSP. SALT
1/2 TSP. PEPPER
Turn broth on and bring to a boil. Add cream of chicken, salt, and pepper. Stir well. Drop dumplings in to boiling broth. Stir carefully occasionally. Turn element down to lowest setting once all dumplings are in. Put a lid on pot for 10 minutes. Open and stir every 2-3 minutes to make sure dumplings do not stick to bottom of pot. Broth should thicken. If broth does not get thick enough add:
4 HEAPING TBSP. SELF-RISING FLOUR (WHITE-LILY)
1 CUP MILK
Mix the flour and milk very well with a whisk and add to broth. Add chicken and mix. Dumplings should change texture when finished cooking they will look flatter. It should be ready 15 minutes after adding dumplings.

Mom was a farm girl, she started cooking at 11 yrs. old for 20 to 30 farmers during harvest time. She and her 4 sisters would go to whatever farm was harvesting and cook for all the men, that woman could cook up a storm. She always made drop dumplings for chicken n dumplings or beans n hocks stew. Nothing better than good old country cooking!

Augusta GA; my mom made the best chicken & dumplings I've ever eaten out of leftover biscuit dough. That woman could make anything out of biscuit dough😂. I sure miss my mama, wish I had a third of her culinary skills😢. Blessed day everybody😇!!

My mom made chicken and dumplings all the time, when visiting her, we always requested it, so good, didn't use cream of chicken soup, did her own thing, so good.i miss my mom and her cooking 😢

Louisiana Girl here. Living in Texas now - I use homemade rolled out dumplings. Not made with biscuit mix. But, very similar to your recipe. Looking forward to making it again this Fall! Love your show!

My mom dropped her dumplings and they were so good, she used baking powder in them so they would puff up and get fluffy! She also never stirred her chicken and dumplings, just put the lid back on the pot and steamed them. I always ate more dumplings than the chicken and broth! Thank you for the video Tammy and Chris!❤

@@tinathorpe2747 i don’t remember the measurements, flour, baking powder, salt, pepper and milk. Back then all we had was regular flour, but now I would use self rising. She was from the UK, a WWII bride, and did things a little differently in her cooking including using curry in her chicken stew.

My daddy made the best rolled dumplings and drop biscuits along with cherry rhubarb pie Sunday dinner twice a month we ate the most wonderful chicken and dumplings and nearly every Sunday morning was biscuits and milk gravy fried eggs and bacon or sausage. My mother and her sisters made chicken and dumplings by just using cool chicken broth and flour. They were fabulous. Every recipe I searched for has milk instead. Does anyone else just use chicken broth? They would add enough broth to flour to make a wet dough and then would turn it out on to a floured surface and work in enough flour to.make a dough that could be rolled out, cut and added to boiling chicken broth. The dumplings cooked until they were tender and were never stirred while cooking.

Absolutely that's how my Mom made them back in hills of SW Virginia. But the key to that was using her own home grown hen and boil it to pieces with skin on. The broth would be golden and rich in the fat. That broth had enough fat in it that you only need the broth and self rising flour. They were the best fluffy dumplings you ever tasted ☺💓

That sounds delicious. I make chicken and dumplings fairly often, have not tried making them like your Mom and her sisters, but will give it a try. I seldom will do anything different than my normal because one time an acquaintance suggested I add cream of chicken soup to them, and I did, I absolutely hated them. In fact I don’t really like anything that uses canned soup. It’s been years since I bought any, although as a kid I could have lived on chicken noodle soup and canned cream corn. I also would pass on any canned biscuit dumplings.

I'm so glad that I finally found someone who make dumplings like my mom and her family. I can't remember if they used regular flour or self rising. I haven't made dumplings in years. I'm guessing since it's hard to find a fat hen, maybe some butter should be added to the broth? I'm from southern Illinois but most of my family came from Kentucky and Tennessee.

Kathie says…That would be me! I am 74 years old and I still make my great grandma’s recipe for Chicken-‘n-dumplins! One fatty, Whole Fryer boiled with just salt and pepper until the meat falls off the bone. That makes the best broth…no vegetables! To regular flour, add about 1 cup of the cooled chicken broth with that good yellow fat! (and salt to taste.) Pick all of the meat off of the bones and fat and set aside. In a medium-large bowl, start with about a cup of flour. Make a well in the center and pour in the chicken broth. With a fork, whisk the flour and broth…it will be liquidy. Combine really good, then gradually add flour enough to knead the dough until it is soft, smooth, and easy to roll out. Dust the table really well with flour then cut the dough into 3 pieces. Cover 2 of them with a towel, and on the well floured surface, roll out the dumplins’ thin enough that you can see through them. (Make sure that they aren’t sticking to the table as you roll them out). Grandma cut the dumplins with a very sharp knife (I use a pizza cutter). Push the dumplins aside and do the same thing with the rest of the dough. Dust the dumplins with flour. With the chicken removed from the broth (with enough salt and pepper added to your taste) bring the broth to a boil and in the center of the rolling boil, quickly drop in the dumplins. With a wooden spoon, if needed, gently move the dumplins to the edge of the pot. Work fast and add all of the dumplins to the broth, give them a gentle stir and cook them until they don’t taste like raw dough. Add the chicken back to the broth with the dumplins and cook a little longer. Taste ‘em…you’ll know when they are right! These dumplins are about 2-2 1/2” square, and they will slide down your throat! Soooo Good!! You can add a little Baked Chicken Soup base but No Soup!! Grandma Deakins was not only a midwife in the coal mining camp that their family lived in, but she made these Chicken-n-Dumplins for A LOT of people, including their family. Hard times back then and they had no Chicken Soup base or canned soup to add to her dumplins,….but let me tell you…they…are…delicious!! I was raised on ‘em, my kids were raised on ‘em, and now my granddaughters make ‘em! There isn’t a time that I make these that I don’t think of my Great Grandma Deakins, in Jackson Hill #4 Coal Mining Camp, Shelburn, Indiana. ❤️👩🏻‍🦳 Rest her soul…she would be so proud to read this!!!

I use flour salt and sour cream for my dumplings. It tastes amazing. I also love your rolling pin. South Texas here. One of my favorite dinners are Biscuit and gravy and chicken and dumplings ❤.

we make drop dumplings large ones. from flour. We use milk. Then we cut the dumplings open and put the chicken and gravy on it. Yum. We Cover the pot when we reduce the heat. The steam cooks the tops. the insides are dry and the outsides are moist. we do not overwork the dough. I have had it both ways.

Thanks for sharing, now I know why my dumplings were falling apart. I didn't have enough flour and I didn't work the dough enough. I will never use tortillas shells for dumplings.

I really appreciate your honest comments about Master Chef. There are many cooking shows that are fun to watch. But it is discouraging to learn that they want you to say unkind things about others. I am a believer in traditional dumplings. They are the best! Yours look wonderful.

Chicken and dumplings are my favorite food. My momma made hers like u do. I add 1can evaporated milk, 1can cream of celery soup, 1can cream of mushroom soup to my broth. I don't like the tortillas for dumplings. I live in South central Oklahoma about 2 miles from Okla/Texas border.

Mom mixed them up then rolled ‘em out, like her biscuits, dropped in the pot, made sure they were all under the broth surface, and let them cook without stirring till done. I miss momma’s cooking♥️ She did use the canned biscuits after she got a bit older. Were good but not like the ‘real’ dumplins’.

I use my pizza cutter to cut my dumplings. My husband's aunt in Tennessee taught me to use self rising flour with oil and chicken broth.

Hi guys ,I'm from Loogootee Indiana and my mom always used canned biscuits when she made hers and I always loved them since I probably had never had them any other way and I'm pretty sure she still makes them that way today.love ya guys have a wonderful sunday!!

I'd use a noodle before a flour tortilla to. I'd use corn chips before flour tortillas. Corn chips and chicken soup is delicious

My mom made Kluski, which is the Polish version of dumplings, for our chicken and dumplings. I use the same recipe, and I always make them from scratch. You’re making me hungry and ready for our fall and winter recipes!

Hello there, I’m new to your channel. I love your videos! I’m from Northern Maine, I didn’t grow up eating chicken and dumplings. Mother and Grandmother made theirs from scratch and cut them like you. They called them chicken and slicks. If they dropped spoonfuls of dough they called them chicken and dumplings. We are from N.C. and Alabama. Pam/Florida

You could also use a pizza cutter to make your dumplings instead of the flat utensil that you used.

My grandma taought me to make my dumplings like you are making them except she used stock instead of milk and we always rolled out dumplings. We added cream of chicken soup too. I prefer to make them with milk

My Mother made dumplings like she was making biscuits, then she’d roll them out and cut with a silver knife and tear them into to pieces and drop them in the pot. They were soooo good!

Many times I’ve bought frozen biscuits, thawed them out and rolled them out in flour. Works pretty dadgum good. 👍

My mom used to make her dumplings like this. But she would use one can of cream of chicken and one can of cream of onion. I have made them myself but it's so hard trying to find cream of onion nowadays. I love your show

My mom did it pretty much the way your doing it and every once in awhile drop dumplings. I use milk and I buy the Mary B brand of dumplings an use those I do however add the large family can of Cream Of Chicken. I like a little chicken and some dumpling in every bite so I also use a smaller hen in its entirety.

When my mother got older in life she started using tortillas. My kids were a fan until they grew up. I love to make homemade dumplings

These dumplings are PERFECT!! This is the way I was taught and like them this way as well. Don’t understand how noodle type dumplings can even be called a dumpling. Looks super yummy Tammy!! Thank y’all for sharing! ❤

I hope you keep making chicken and dumplings every so often. I enjoy seeing the different variations but my grandchildren always ask for “Tammy’s recipe” when they want me to make some for them. lol. I use the original recipe in Cookbook #1. TFS

I can make dumplings, good biscuits, etc but my 90 yo MIL told me her secret- Flatten & cut up canned biscuits!!! We never knew the difference! I buy buttermilk grands, 10 biscuit size, 2 cans. No one knows. 🤠 My biggest learning mistake- Stirring. Do Not Stir dumplings. Never. I gently push a spoon across the bottom but stirring destroys the dumplings. It’ll be soup.

I've made Chicken and Dumplings from scratch for many years. My Grandmother taught me. Yours looks like mine, I've never made them with flour tortillas!

My granny used Jiffy Piecrust Mix and milk to make her dumplings, which were rolled out. She also made Kraut Dumplings. Dad loved them. My father's family was 100% German. Mom and I never could wrap our heads around eating dough in broth. We prefer Moravian Chicken Pie, which is about the same thing when you think about it. Chicken, broth and a pastry crust. It was still very interesting to see the process the way you explained it, so thank you for showing us how to make dumplings. Almost a lost art.

@@jonathan_nc A few years ago I mentioned to my 9 yo granddaughter that I was thinking about making chicken and dumplings, and I asked if she’d eat some if I made them…….her response…….grandma why would I want a wet biscuit? You know it’s hard to get that visual out of one’s head. 🤗

Watching from Missouri, my mother and aunt would boil the chicken to make the broth,made the dough, rolled it out then would cut into strips,gather it into one hand, stand by the stove and tear the strips into pieces as they dropped them into the broth, I am 60 years old and have never seen my family make them any other way.
