Chicken Cordon Bleu with Creamy Parmesan Sauce
2 large Chicken breasts, cut into thinner fillets, making 4 pieces (see video) (I used 4 and made 8 fillets)
6-8 Swiss Cheese Slices
8 slices deli Ham, thinly sliced
Salt & Pepper
4 Eggs, beaten
1 1/2 cup All-purpose Flour
1 1/2 cup crushed Corn Flakes or Bread Crumbs (Panko)
Parmesan Sauce:
4 Tbsp. Butter
1/4 cup Flour
1 1/2 cups milk or half & half
1/2-1 cup grated Parmesan Cheese
1. Slice breasts in half and flatten on a piece of parchment paper with plastic wrap over the meat.
2. Sprinkle each piece with salt & pepper
3. Top with cheese slices
4. Top with thinly sliced ham
5. Roll up each chicken breast as tightly as possible. I held mine together with toothpicks.
6. Roll in flour, then in beaten egg and then in corn flakes r bread crumbs
7.Chill in refrigerator for at least 1 hour
9. After they chill, place side by side in a sprayed baking pan
10. Bake at 350 for 50-60 minutes, uncovered
11. Make Parmesan sauce: melt butter a pan. Add flour & stir well with a fork or whisk. Slowly add milk and then Parmesan Cheese, stirring constantly
12. Slice baked chicken cordon bleu on a plate and spoon sauce over them.
