Almost in tears because I stopped watching KZbin years ago, but a lot of my cooking knowledge and approach to cooking came from watching Chef John. Your videos were so informative and so comforting as I was learning to cook 10+ years ago. I finally have the means, space, and kitchen to really cook the way I want to, and I went back and found you’re still making videos. My heart sings. I hated spinach until I was in my early 20's and ate a fresh spinach salad with a raspberry vinaigrette, walnuts, and sweetened cranberries. That's because my mother would take canned spinach (which is already cooked), pour it into a small pot and cook it until nearly grey in color. I love my mom but she wasn't a very good cook. It took a few more years of being introduced to recipes like this one before I started enjoying cooked spinach.

It looks almost festive. My mother came from Southern Italy... a small town. She taught me how to prepare dandelion greens in the spring time. They are supposed to cleanse the body. The way she did it is almost exactly the same way you prepared the spinach leaves, in fact, when I can't get dandelion greens, I prepare spinach that way.

It is very good with plain rice or buckwheat on the side. Good for your health, because it is rich with B and E vitamins, light and nutritious. Very fast and easy recipe to cook too.

That's side dish goodness, but very strong for first-timers smelling it being cooked. The liver will taste very mineraly (high in iron) while the onion (sauted) will add sweet. Olive oil is healthy, and a pinch of salt to your taste. A pinch of cayenne too, for some tingles, and finish off with a squeeze of lemon to knock back the mineraly/iron taste Mum and dad used to well done the liver, which doesn't take long. Although I liked the taste, I kind of just remember it too ...rubbery. So now, I use chicken liver, as fresh as I can find them, because it's a light quick fry to cook through (practise in small spoonful batches). Saute the onions first, then add it to the just-cooked-through liver

If you can forage stinging nettle I highly advice you to replace spinach with that, since it is superior in taste ( only pick the most tender leaves )

Powdered milk also makes a great crust on meats. Good maillard reaction enhancer that doesn't change the flavor profile to the nutty side, a cleaner fresh veg/savory meat profile. Works with pretty much any meat, poultry, or even tofu. Also good for those who can't do gluten or want keto levels of reduced starch in a dish.

Another winner, John. When you flip the chicken back over is when a chunk of butter is due. Cook in olive oil, flavor with butter.

Old's Cool! I worked at a herd of restaurant in the Chicago area, and this seemed to always be on the menu back in the late 70's early 80's, and each one did something different but the basics were the same; Chicken and Spinach. Mmmmm. I need to make this now!

UPDATE: we did make it last night. The proportions were enough to have 5 pieces of chicken (just do them in turns). This was actually my first time with kosher salt, and I think I used too much. I also added some Parmesan before adding the chicken into the cream, which probably didn’t help. I still loved it, though: quite flavorful and the chicken stayed tender.

I made this for our dinner tonight, and it was very good. I do have one caution, though, or actually my husband does. He was eating in front of his computer, and sneezed with a mouthful of the spinach and cream sauce, and he says it’s very sticky and hard to clean off the screen and keyboard. So just be careful! 😂

I made it. It is 5 stars good. The amount of garlic sounds like a lot, but it really makes the spinach delicious. If I made it again, I would leave out the red bell pepper. It looks pretty but distracts from the spinach, imho. I would replace it with diced sweetened pickled jalapeños. I was thinking the spinach alone would make a great side dish topped with bread crumbs and parmesan cheese. Chef John is a genius artist in his own time. ❤️❤️❤️ My family and I love you Chef.

What about coating the chicken with a paste of unsalted butter, corn starch, and flour? Butter and flour for the color,and corn starch for crustification....by the way this recipe is perfection regardless.

I used to HATE spinach, till I fried lots of garlic in olive oil, and stirred the blanched greens in, and added fresh lemon juice at the end, and as a Greek I could tell I'd been missing out for ages on one of the great flavors of the south, and of atavic tradition, all through the Mediterranean to the middle east. Like most kids, I had spat it out at school, after it had been f**d-up by boiling it in cheap aluminum cooking-wear, for too long, and with no addition of oil or aromatics, or even salt, for this matter... Not far from cow-dung, IMAO ! Sometimes, ignorance is shameful 😖! If you're still too sensitive to their bitterness, try half a tsp of sugar or a tbsp of fish-sauce, or a couple of anchovies (are U alright, out there 😅?) melted with the garlic. Or get used to Swiss chard, for a start, maybe ? Bon appétit from Paris !
