Ingredients-
Chicken- 700 gms
Ghee- 2 tbsp
Onion- 6, ginger- 2 inches, 2 whole garlic
Green chilli- 4, tomato - 1/2, curry leaves, coriander leaves and lemon juice.
Dry spices- turmeric- 1 tsp, kashmiri red chilli powder- 1 tbsp, coriander powder- 1 tbsp, black pepper- 1 tsp, garam masala- 1 tsp, salt.
Curd- 1/4 cup.
To make Chicken Ghee Roast,
1. Grind garlic and ginger without adding water.
2. For marination take washed chicken pieces in a bowl. Add all the dry spices along with the curd. Coat all the spices over the chicken pieces and set aside till we fry onions.
3. Add ghee to a kadhai, fry onions till translucent in colour. Add crushed ginger garlic. Cook for 2 mins or till the raw smell goes.
4. Add green chillies and curry leaves.
5. Now add the chicken pieces and roast on high flame for about 10mins. Keep stirring in between so that pieces do not get burnt.
6. Add tomatoes and salt. As you add salt, chicken will release some water. Cover and cook for about 15-20 mins or till it gets cooked properly.
7. Garnish with curry leaves, coriander leaves and lemon.
