CHICKEN GHEE ROAST
Preparation Time: 20 Minutes
Cooking Time: 50 Minutes
Serves: 2-3
Course: Main Course
Cuisine: Indian
Ingredients
For Chicken Stock
2 tbsp Ghee
300 gm chicken bones
5-6 Black Peppercorns
1 Black Cardamom pods
12-15 Cashew nuts
1 ltr water
Salt to taste
1-2 Bay leaves
For Chicken Ghee roast
¼ cup Ghee
½ whole Chicken
½ cup Byadgi Chilli Paste
2 tbsp Ghee
½ tbsp jaggery
For Garnish
Fresh Coriander leaves
Process
In a saucepot, add ghee, chicken bones and roast them well.
Add peppercorns, cardamom pods, cashew nuts, water, salt to taste and bay leaf mix well and let it cook on medium flame.
In a medium size bowl, add byadgi chilli, water and soak it overnight.
Skim the stock. Add the chicken into the saucepot and poach it on medium flame .
Remove the chicken and chicken bones in a plate and keep it aside.
Blend the chicken stock.
In a pan, add ghee, chicken and sear it well.
After searing cut the chicken into medium size pieces and roast them well, add byadgi chilli paste and roast well till for 15 minutes.
Add the cashew stock and mix well , add ghee and roast well and let it cook on medium flame till the ghee separates.
Add jaggery and mix well .
Garnish with coriander leaves and serve hot.

Kashmiri mirch is a actual variety that is not used in the so called commercial Kashmiri lal chili powders, those usually contain Byadgi mirch :)

I am saving this recipe! Let me tell you I tried your Akhni Mutton Pulav in pressure cooker on last Wednesday. It turned out to be fantastic. My wife prepared Kachambar. It became so tasty that we had in lunch and dinner too. Thank you so much Ranveer. Hello Ranveer - I made this recipe as a Fathers day treat for my daughters, and it was simply amazing. My children loved it.. Appreciate all the effort that you put in to present Indian delicacies in such a simple way. Only variation was that I didnt soak the Beydagi chilli overnight, for some reason I missed that detail 😟

I subscribed to this channel because he is sweet, shares every minute(tiny) detail while cooking and how to cook. The quantity and pattern of ingredients to put while cooking is very very important for the food to look good, smell good and most important taste should be mouth watering. 😋 This man does hard research for every dish before making a video and presents us as "stories" 😍. These videos are perfection. As a European it is very hard to find good Indian food and when I do it is British. I have never had access to authentic Indian dishes and this video series has immersed be into this world of refined and varied regional cuisines that I could only have ever dreamt of. Anybody who does not try these recipes is doing themselves a disservice.

I am so glad to my native dish on your channel, there's a small mistake but infact a bigger one- i.e we at native don't use/know bhains ka ghee...!!! Since ages we Kundapurians use only COW ghee...& It tastes much yummier for this specific dish....!!! Thankyou

Take off the cashews and other garam masala and grind with about ½ cup of stock in your mixer grinder. Then add ait back to the stock, give it a good mix and done
