Chicken livers with onion and tomato sauce
Ingredients:
Chicken livers - 700 g
Onion - 4 pieces (400g)
Bell pepper - one piece
Hot pepper - one piece
Oil - 120 ml
Mashed tomatoes - 400 g
White wine - 150 ml (or lemon juice - 2 tablespoons)
Garlic - 6 cloves
Salt - to taste
Pepper - to taste
Cumin - one teaspoon
Coriander - a teaspoon
Sugar - a teaspoon
Chopped green parsley
Wash the chicken liver and put it in a bowl of cold water with a teaspoon of salt for an hour. Then wash again and put in a colander to drain well.
Cut the onion into thin slices and fry in all the oil for 7-8 minutes, on low heat. Add a teaspoon of salt and ½ teaspoon of pepper.
Cut the pepper into strips and saute together with the onion. After 4 - 5 minutes, add two tablespoons of water and cook on low heat for 7 - 8 minutes with the lid on, stirring from time to time.
We prepare the potatoes for the mash. Cut 800 g of potatoes into cubes and boil them in salted water.
Add the livers over the cooked vegetables and mix gently.
Add cumin, coriander, crushed garlic and pepper and after 10 minutes add the wine and the pureed tomatoes, a teaspoon of sugar, salt and pepper to taste.
Boil covered for 10 minutes, stirring occasionally.
The livers are cooked, the sauce is creamy, we turn off the heat and sprinkle with green parsley.
Prepare the mashed potatoes to which 50 g of butter and 50 ml of milk are added.
This liver stew can be served plain, as a first course, or with mashed potatoes, rice or polenta, as a second course.
