Chicken luwombo is a popular dish in Uganda, in fact, it is referred to as a royal dish. It's stuffed chicken which is wrapped and cooked in banana leaves.
INGREDIENTS:
2 Large tomatoes
1 large red onion
Bunch of dhania leaves
3 garlic cloves
2" ginger
1 hoho (green bell pepper)
2 beef cubes
1 tsp curry powder
2 Tbsp vegetable oil of your choice
Peanut sauce
1 Tbsp Royco Mchuzi mix
1.5 Kg chicken
Enough banana leaves to wrap you chicken

Thanks for the Luwombo recipe. I like it better with the free range chicken. You can make a whole one but the pre-cut pieces are OK before cooking. When roasting it before cooking do not forget to put the banana peals on top of the charcoal to prevent burning and to add more smoke flavor. As for the ingredients, next time try cutting and squashing the tomatoes, or you can even blend them, then put all your ingredients in a bowl and mix them together with a tiny bit of water. Stuff and put all around the chicken if whole or deep the around all individual pieces. To make it more flavorful the trick is to keep the steam in. start by laying banana leaves in the pan. Put in the food to eat with the luwombo eg steamed bananas. Place the luwombo on top continue by laying enough banana leaves to overlap each other. Cover with another pan and cook. Tell me the difference when you try that..

Tasted it a couple of times and for sure its one of the yummiest dishes.Though had no clue of the intricacies involved in preparation,so thanx for the video

Bena Ben Hai jirani, and here I thought you would give me some pointers on how to improve my dish :p, sasa when you tell me you are clueless....hahaa. It is very tasty, there we are in total agreement. I have a question; when doing my research on luwombo I found out that there are different types. Beef, vegetables, etc. So, what is luwombo exactly? Is it the act of wrapping food in the banana leaves or does it refer to the food that is cooked in the banana leaves?

I am in hospital in England, the nurse looking after me is from South Uganda, we have been talking about food, I thought I would look at Ugandan dishes, this looks amazing, though I do not know what the green leaf is, Coriander or Cilantro similar? As soon as I get home, the first thing I am going to make is a Rolex, then work my way up to this beautiful looking dish. Thank you for sharing & it is good to read other comments. Thank you. David.

My suggestion is to start asking your friends about the banana leaves, I'm sure that one of them will have a banana planted in their back yard or they know someone who has planted one. It's a fantastic dish, I loved it and it's one of my absolute favourite ways of cooking chicken.

Ha haa you got me on the Luwombo part.But the little i know its actually the wrapping in the leaves that is "Luwombo"Its originally a BAGANDA Dish from central Uganda and am from the Eastern part of the country(Busia).Our staple food is (Ugali) millet mixed with cassava flour and SAMAKI

Ben, millet is also very nice. My grandmother spent her adult life in Busoga. She planted all types of food. Though from the central We ate Kalo and learnt about bushera at a very tender age before going to boarding schools. Upto now bush must be in the kitchen... I think all Ugandan food is eaten by all Ugandans.

can I use aluminium foil paper instead of the banana leaves?

+margaret mweu Yes you can, but it won't be the same flavour-wise. The aluminium foil will help in trapping in juices and cooking the food using steam. Banana leaves have their own distinct aroma that they impart.

it's good but in Uganda, traditionally we don't fry the ingredients for luwombo.
