I have not had chimichangas since I was a kid, and I have been thinking about them lately. Think I will make this with some pan fried, crispy tofu. Sounds perfect!

Oh, you are so right, chef - chicken thighs are much preferred to chicken breast. And for that matter, egg whites preferred to water for sealing these, as well. You are my cuisine guru. I am but the learner, sensei. :)

I made these yesterday and they turned out so good! I'm glad because I only realized I hadn't bought any sour cream/salsa/any topping whatsoever until about halfway through cooking. Everyone was scraping for the last crumbs on their plates. I've never seen such clean plates. Thank you so much for this recipe. I can't wait to try another one. I'm looking at those peking duck lettuce cups. I'll just have to save up a bit. >.>

I just sat down with my two year old granddaughter to peruse a few of Chef Johns videos. We’re only a minute into this one (our first pick) and I’m remembering some people’s comments on how his voice calms them and puts them to sleep. I look over at my granddaughter - - and she’s out like a light! 💤

Made this tonight: As I was sealing them with an egg wash I questioned whether all of the extra steps were really going to produce something better than just slapping the filling in fajita style. Then as I put them in the oven I questioned whether these already browned tortilla packets were going to emerge as bricks. But the second I cut into one I knew I was right to trust Chef John. They were AMAZING. We ate three tonight and sealed three and put them in the fridge planning to cook them in another day or two. Fingers crossed they turn out as well.

Just thought of another way of eating this ...... Wrap them up spring/egg roll style. Then you can just hold and eat them. It'll be less messy than the pocket pouch style. Just make sure you provide spoons with the dipping sauces so nobody double dips if you're serving them at a party.

Yummy! I have done the same thing with a beef and bean filling, except in a huge batch. I browned, wrapped, and stuck them in the freezer. They became hot, bubbly and crispy on the Foreman grill whenever we wanted them.

Chef John I’m with you, thigh meat is the best. More cheese for me please. I soooo can’t wait to try this peblanos are the only pepper for me. We wrap our brisket in them after a quick smoke. They add so much flavor and just the right amount of heat. Who knew making your own would be so easy!

This looked really good. I am puertorican. You might know we make almost everything with our puertorican sofrito. I make a combination of rice and beans seasoned with among other things our sofrito. And I add that to the chimichanga. I usually prepare it using pernil meat.(pork roast) totally not traditional but super delicious.
