Looks wonderful! My mom has a similar recipe, but she melts in cubes of velveeta to the filling, just before you add your peas. So, do everything you did, then velveeta, stir to melt, then peas, then continue.

This pot pie looks amazing! Definitely going to be making this! I've always known the "Holy Trinity" to be a cajun/creole phrase used to identify diced onions, diced celery, and diced green peppers as the base for many, if not all, cajun/creole cuisine. Not carrots... but do you boo! P.S. I loooooove High Times After Dark, its lit!

onion, carrots and celery is from the south if you are from the north it's onion, garlic and green peppers. either way it's aromatics and adds flavor

Question! Well first, thank you for sharing...it looks awesome. Anyway, I always add potato to my Chicken Pot Pie but sometimes they end up not fully cooked or mushy. If you added potato, at what point would you suggest adding them to correct that? Love ya!💜💜💜💜💜💜💜

Cooking with Mo I would say pre boil them when they are almost fully cooked and then remove them from the water! And then add them at the same point of the frozen peas
