This CHICKEN POTATO SALAD is a Filipino version af chicken potato salad most commonly seen during the holiday seasons. Creamy and loaded with flavors that you can served as the main dish or side dish. Condensed milk might seem like an odd addition but it does add creaminess and balances the savory flavor. You may season the chicken if you like, but this salad is loaded in flavor and creaminess that the cooked chicken will absorbed once mixed

INGREDIENTS:
4 Potatoes, boiled
1/2 cup diced carrots, boiled - cooked for 3 minutes not 30 😊 (typo).
1/2 pound chicken breast, seasoned with salt and cooked
3 large hard-boiled eggs
1 small onion, peeled and diced
1/2 cup crushed pineapple, drained
1/4 cup sweet pickle relish
1/2 cup mayonnaise
2 tbsp condensed milk (trust me this will give balance to the flavor and additional creaminess)
salt and pepper to taste
