I got inspiration from you and several other videos about ground chicken on the flat top. After golf today, I decided to get some ground chicken (first time ever using ground chicken). I got some 92/8 from Kroger. I decided to do some buffalo chicken smash burgers. Ground chicken, minced onion, Franks hot pepper dust, AP seasoning mix. I toasted 4 buns, made 1/4 lb burgers. Topped with Franks mixed with a little olive oil, ranch dressing, lettuce, thinly sliced carrots……..boom! Thanks for the inspiration!

Very nice. I use cream-soaked bread in my smash burger mix as a binder, but that wouldn't solve the moisture problem with ground chicken. Your solution using mayo/mustard and bread crumbs is a really good one.

So nice! I don't know why I've never thought to do this with ground chicken. I do something similar, a stuffed turkey burger. I stuff it with celery, provolone, and pepper jack cheese, seasoned with a Northwoods seasoning from Penzy's (even though they call me a racist), and then top with leaf lettuce, fresh garden tomato, and a lemon basil mayo! It's good to try another meat every so often. I'll give this one a try myself!

What I do is similar with turkey. You can go with the leaner meat if you add the moisture as you say. I incorporate fine diced bell pepper but any Pepper will do, fresh diced onion, mushroom, tomato and diced black olive because I like olive. I mix that all together before making patties. You really don’t need any condiments after that because of all the flavors. As you stated, could serve on two lettuce leaves. I do like avocado and the creaminess that it provides like mayo. The bacon would be an added plus. You did a great job. It looks fabulous. We are one in the same. Make it too big that we can’t get our mouths around it ☺️

That looks fantastic! As I was cooking my smash burgers last night, I thought of a video Idea for you. I make my smash burgers a little different. I mix bacon in with my 80/20 burger. Finely chop 1/3 pound of bacon and add it to a pound of burger. You could do a comparison video to the traditional.

Thanks Barry...I have a saved response because this is asked alot...hope it helps This is definitely a hot button topic… And my answer would be that you have to use metal utensils AT YOUR OWN RISK. The actual Pit Boss Ultimate griddle manual says “non-metallic utensils”. I know of a handful of Ultimate griddle owners that have been using metal utensils on their griddles for a while and they’ve said that there hasn’t been any damage… but like I said, you have to use at your own risk - I’m sure that Pit Boss probably won’t replace your griddle top for you if you damage it with metal utensils. Also, there’s a difference in the types of metal spatulas... my preferred spatula has rounded edges and does NOT have the sharp beveled edges all around. That’s the spatula that I like for my other griddles as well. I would never use a square ended, beveled edge spatula on mine. Also, you’ll notice that I still use a wooden scraper/spatula to actually scrape down the griddle surface (NOT a metal bench scraper like I use on my other griddles). So the short answer is use metal at your own risk, and if you decide to use metal on yours, be careful about which metal ustensils you’re using and how you use them on the surface.

OK, when I first saw chicken smash burger I thought this sounds like a let down. But it's you guys so what the hell I'll give it a watch. Glad I did, it looked amazing. Two points I want to mention though. #1- you had troubles finding chicken thighs? This does not bode well. I'm always surprised and happy that the best part of the chicken is also the least expensive. Hmmmm. #2- loading up a burger. At times I wish I was like a Anaconda snake, able to dislocate my jaw so I could eat those towering piles of goodness called "ultimate " burgers. That's one of the reasons I'm interested in smash burgers. If half the burger is going to end up on the floor or ground it's time to rethink the build. Good to hear you mention that problem. 👍 Anyway great video, looking forward to seeing the next one. FYI, I will be doing a video in a few weeks ( once I get a few "rookie " videos behind me) that I believe you will like. Here's the teaser, flatop webber kettle smash burger. Homemade Hamburger Buns For the yudane - 50g (1.75oz) white bread flour 50g (1.75oz) boiling water For the main dough - 250g (8.8oz) white bread flour 150g (5.3oz) cold milk * 4g (0.14oz) instant dry yeast or 4.8g (0.16oz) active dry yeast or 12g (0.42oz) fresh yeast 20g (0.7oz) sugar 20g (0.7oz) soft butter 1 egg yolk, around 20g (0.7oz) 6g (0.21oz) salt 1 egg white for glazing Sesame seeds to sprinkle Method 1. Make the yudane. Mix the flour with boiling water until there is no dry flour left. Cover and refrigerate until completely cold. 2. Make the dough. In a large bowl combine the milk, yeast, salt, sugar, and egg yolk. Mix to dissolve the salt and sugar and to hydrate the yeast. Add the yudane and the flour. Mix to a dough. 3. Tip the dough out on the table and leave to rest for 15 minutes to let it hydrate. It will be easier to knead afterwards. 4. Knead for 6 minutes using the stretch & fold method. Tear in the butter and knead for 3 minutes longer. *Desired dough temperature 25C - 26C (77F - 79F). If your dough is warmer, then it will ferment more rapidly. If it is cooler, then it will take longer. Adjust proofing time accordingly. 5. Cover and ferment for 2 - 2.5 hours. 6. Divide the dough in 4 equal pieces and give them a light pre-shape. 7. Rest for 20 minutes. 8. Final shape. 9. Final proof will take around 2 hours. *During the final hour of fermentation preheat your oven to 160C (320F) fan on. 10. Brush the buns with egg white and sprinkle with sesame seeds. Press the seeds in with the palm of your hand. 11. Bake for 25 minutes or until golden brown all over.
