Veges have high water content and u need your stew to dry up quick so just a little tip, you can ignore the water. And possibly the oil can be reduced too.

Beautifully prepared my sister givin thanks we have to learn to prolong our lives & families by removing some if not most of the oil in end result of meal cooked oil does nothing good for our arteries etc clogging up our systems unless doing a lot of exercise but avoiding trans fat in food is way to go for our longevity to remain a possibility a lot of salt sugars & all saturated fats destroying our health making us disabled too early in life when we have all the best ingredients in our food let us protect our health

Indeed. That is a rich vegetable broth right there. Very useful for different purposes - for example, pasta with vegetables, to make couscous, etc.

I do something similar. Except I remove the tomato skins ahead and cook the vegetables without adding any additional water but add a little cooking oil. The tomatoes create enough liquid. Once vegetables cook enough and cool, I blend in pot with a hand blender. Then follow same steps.

No need to add water that you end up throwing out 😵💫. Effectively losing vital nutrients in the process. The ingredients especially the tomatoes have enough liquid content to cook the whole lot. Trust me. That’s how I do it even without tomatoes.
