Chicken Taquitos
Serves: 1
½ Leaner
½ Lean
(Need to add 3 Greens)
3 Condiments
1 Healthy Fat
4.55 oz. raw Boneless Skinless Chicken Breast or 3 oz. cooked, shredded (1/2 leaner)
½ C. 2% Shredded Cheese, I used Mexican Blend (1/2 lean)
½ Tsp. Crushed Red Pepper Flakes (1 cond)
1 Tsp. Tomato Paste (1 cond)
1 Tsp. Fresh Minced Garlic (1 cond)
2 Tbsp. Herdez Guacamole Salsa (1 healthy fat)
3 Tbsp. Water
In a skillet cook the chicken breast completely and shred. If using rotisserie chicken or already cooked chicken just shred and add to the skillet to reheat.
Add tomato paste, water, garlic and red pepper flakes and simmer on medium-low heat for about 2 minutes.
Place a small amount of shredded cheese into a waxed paper plate and microwave for 25 seconds. Let it cool for about 10seconds.
Add a 1/3 of the chicken mixture (you should have enough chicken for 3 taquitos) to the center of your melted cheese and roll to form a “taquito” (work fast and only one at a time, cheese hardens pretty quickly).
Repeat the same steps until you have formed all your “taquitos” (I made 3)
Drizzle the guacamole salsa over your “taquitos”
