1) Velveting chicken is a total game changer! 2) I've been doing different stir fries for years, and had no idea that was the purpose for the Shaoxing wine. 3) I am not a veggie lover. The ONLY way I like them is in a stir fry. 4) I may need to buy one of those ruffle slicers for carrots and potatoes. 5) At the risk of sounding like a broken record, I ADORE your videos!!!!

I was never happy with my attempts at stir frying until I started using your recipes. Now I follow your general formula with whatever proteins and vegetables I have/feel like the most. Thank you for this great recipe. This is my wife’s go to order when we visit our favorite Chinese restaurant. Their sauce is sweeter than this and my wife wants me to try to make this sweeter. (I like it the way it is). Should I simply add more sugar? Is using brown sugar sweeter? What about adding Hosin? Thank you in advance.

we don't buy a specific brand, but we usually look for Thai jasmine rice. Usually you can't go wrong with that.

great video…ive made your mongolian beef…stir fried the beef instead of frying it…and used the sauce in the recipe and it turned out better then 90% of the takeout here!! Also did your broccoli beef and superb as well! Thanks for the vegetable cutting link. Makes food look fancy. Also thankyou for the the dark and light sauce recipe that i can make ahead and store it in the fridge so i can whip up something yummy quickly. can you freeze it? Oh btw…i bought your awesome cookbook and tell everyone about your channel at work! I cant wait to make more of your recipes. Question? If i was to add Msg when would i do that?

I have a question - do you always use white onions?? What about red or sweet yellow? Is it just personal taste or is there a reason for using the white primarily?? Also are those hot peppers or mild like bell peppers?

The peppers are holland chilies which are typically mild! We happened to use white onions here, but we love red onions, and shallots for that matter!

If you season and cook your food, that’s processing too. Unless you’re eating your food raw, virtually all your food is processed. What is your point?
