This is a really good dish that I learned to make in Chinese cooking school 30 years ago. Your take is spot on, Rik. Chinese dishes generally require a little bit of a number of ingredients and that makes a world of difference in the taste. A lot of little nuances add up to a big overall taste. My brother and I have been talking about your recipes. He just got out of intensive care in the hospital and as soon as he is well enough I will watch this with him. Although he won’t be going home any time soon , he loves Asian cooking and has been working on learning Japanese dishes. Talking about your recipes will give us something pleasant to discuss, although the contrast to hospital food may be painful. 🙂. Thanks Rik.

Oh my friend you are killing me. Velveting the beef makes all the difference in this dish. I agree with rinsing the beef after the sodium bicarb rest as some are very sensitive to the taste. Great job on this dish !! So simple and yet so tasty !!!! My son is allergic to fish so true fish and oyster sauce is off the table at my house, which really sucks as they both bring such great umami character to Asian dishes. Keep up the great work !! It is interesting to baking soda used as a tenderizer; something that I have never done. With that exception and one more, this is exactly the way I make mine. The other exception that pushes this a little more toward my all time ouster sauce favorite is the addition of green pepper cut into squares; but, that is beef and pepper in oyster sauce. Not familiar with Beef & Onions as an Asian dish but your recipe is 100% the recipe for Beef with Broccoli! Just blanch a cup or 2 of broccoli florets and add with the beef. If you want it more saucey add 1 teaspoon chicken powder,1/4 cup water and about another 1/2 teaspoon cornstarch to the sauce recipe. Technique and flavour profile are bang on!!

Yes I have - its a flavour enhancer that many folks moan about - I have no issues with it at all. Virtually all the food in Asia has it in. Some more than others. Used sparingly and if you have no allergies its ok. Thank you. Best, Rik

I used your recipe last night but I added chopped bell peppers, canned tiny corn spears and canned water chestnuts. Combined with your beef and onions and your great sauce it was fantastic. Thanks for the tips and the no fuss presentation. I'll keep watching for more no nonsense ideas. Is it possible to put up a link to the recipes as you are cooking and showing them?
