It has good flavor and good texture to use it as spreadable cheese on crackers, on celery sticks, cheese sandwiches, grilled cheese, etc. Gluten-free, Low-in-Fat, Plant Based.
Chickpea Spreadable Cheese
½ c dried chickpeas
½ c water
2 T lemon juice
1 (4 oz) jar pimentos
1 tsp paprika
1 ½ tsp salt
1 tsp garlic powder
1 tsp onion powder
¼ c nutritional yeast flakes
1 T olive oil
You need to soak the chickpeas for overnight. Cook soaked chickpeas for about 20 minutes or until tender. Drain completely. Put all ingredients in a blender and blend until creamy. The mixture is thick. Transfer the chickpea mixture in a glass container. Ready to eat. Keep it in a refrigerator up to 5 days. Serve on crackers, toasters, bagels, pizza, celery sticks, cheese sandwiches, grilled cheese, etc. Also, good filling for grilled cheese. Delicious!
