It has good flavor and good texture to use it as spreadable cheese on crackers, on celery sticks, cheese sandwiches, grilled cheese, etc. Gluten-free, Low-in-Fat, Plant Based.
Chickpea Spreadable Cheese
½ c dried chickpeas
½ c water
2 T lemon juice
1 (4 oz) jar pimentos
1 tsp paprika
1 ½ tsp salt
1 tsp garlic powder
1 tsp onion powder
¼ c nutritional yeast flakes
1 T olive oil
You need to soak the chickpeas for overnight. Cook soaked chickpeas for about 20 minutes or until tender. Drain completely. Put all ingredients in a blender and blend until creamy. The mixture is thick. Transfer the chickpea mixture in a glass container. Ready to eat. Keep it in a refrigerator up to 5 days. Serve on crackers, toasters, bagels, pizza, celery sticks, cheese sandwiches, grilled cheese, etc. Also, good filling for grilled cheese. Delicious!

Will it firm up a little bit if you put it in the refrigerator?

I mentioned it during the demonstration that it will get thicker as it chills in the refrigerator. However, if you want it firmer spreadable cheese, you may reduce the water to 1/3 cup instead of 1/2 cup. God bless you!

Can you use canned or regularly cooked chickpeas or does it need to be soaked and then cooked

You can't use the canned chickpea since it is too mushy and the texture will be watery. Where can you find the cooked chickpeas from? Best way to have the same result from this recipe, you should soak the chickpea and cooked. God bless you!
