Ever since I figured out how to make vegan brie and blue cheese tasty, I was determined to make Vegan Hard Cheese. It took me a while to get the result I wanted but the method is simple and accessible for all. I hope you enjoy my video and find it helpful.

I was thinking the same. The level of care and dedication is incredible. I would definitely want to buy cheese from Gourmet Vegetarian Kitchen too. I think eating this would make us eat her love and care and feel ourself with good energy and positivity!

...you don't know many people with hobbies they're dedicated to, do you? Or even just people that are into skill building? Or anyone in a trade job? Most things, just in general, take longer than 18 months to get good. And even with dairy cheese, most of the time is aging. Sits in a cave somewhere with no one touching it.

Hi, I do my own vegan cheeses for five years or more, but yours are really the best videos teaching how to make vegan cheeses. I never let them so many months to age. I was afraid to create unwanted molds. Not anymore after watching your video. Thanks for this.

Which probitics do you use? Acidophilus or mesophilic? Are they both vegan?

I had the worst day, and you just made it way better. I’ve already made the Brie and I am thrilled to try these recipes 🙃 The most amazing thing about your recipes is they’re from almonds! Me and my brother are both allergic to dairy, but he’s also allergic to tree nuts. Not to almonds though! So we can both enjoy these cheeses

Someone needs to start making this in production level, and so we can get it at deli's etc, because honestly for people on the move are not able to store cheese for 12-18 months. Would love to taste, perhaps one fine day haha. Thank you for your dedication and beautifully made cheeses.

Made two versions of the hard cheddar in November '22. One with cashew milk and the other with almond. I modified the Gourmet Vegetarian Kitchen recipe - I didn't use probiotics or coconut oil - instead used 900ml nut milk and 100ml coconut milk and added mesophilic and miso to the curd - It has been 6 months and no sign of any mold under the wax for either the cashew or the almond 🙂I am going to wait the year though. I then made a larger almond one in February '23. However, I added some date syrup after the milk reached its peak temp and the heat was turned off and then I sprinkled the mesophilic over the milk at 85F - stirred in after rehydrating. Will see if there is a difference as to when the mesophilic is added.

@@cassandra9581 Update: Cut open all the cheeses and taste - I had 2 8-month 'cheddars' and 1 6-month 'cheddar'. No mold whatsoever as I made sure they were pressed and dry before coating with the faux wax - coconut oil. The faux coating did not crack. The cheeses were not hard but solid - the knife went through like butter - I could squish it between 2 fingers. There was no smell of cheddar. In fact, there was no smell at all. Only one tasted slightly like cheddar - but not much. They all tasted terribly acidic in a VERY unpleasant way. I'd say this was a bust. Verdict: Will never make again. I'm not vegan so, I will stick to regular cheeses. No, these cheeses will not melt. Back to making cheese with cows milk - coming out beautifully.

I like the music as much as I enjoy your videos. I am planning to apply a similar route for split peas. I really admire your patience with such long term projects too, like soy sauce, miso. OMG this is incredible! Thank you for this, so nice to watch and so instructive. I made the blue cheese and the brie. Also made brie using pistachio which was unbelievable I recommend trying it! I am now thinking of doing it again and ageing the pistachio brie for 12 months, I can imagine the taste would be even better. :)

What great timing.. seriously... I've just made my yogurt from a culture and strained yesterday then late last night started pressing the whey out... so I got my seasoning in it earlier a d started looking around for further ideas on an aged cheese and here you are !!) You've been quite busy making your cheeses 🧀 😉 👌 THEY look amazing 😍👍.. I shall see what I see from here then... I hope mine do as well as yours have done. mine will never make it a year tho 😆.. I need to make a couple more batches so we are not so tempted to devour 🤦‍♀️😋✌️. Thank you for sharing your recipe and I found your fails a treat to observe... I will ha e to draw on tour bravery now... im afraid I would have simply tossed them but now I shall do the trim and taste method , of coarse within reason . 😉👋🏻💝

I've accidentally came across your video about almond ricotta because my yougurt failed and I wanted to see how to turn it into ricotta. But I wasn't expecting to find these aged cheese recipe! I've became vegan for almost 2,5 months. I don't care about meat, but I so used to love cheese. Unfortunately, all the vegan cheese sold (at least in my country) is not the one - it doesn't have that firmness and rich test of the one, which was left to age. So I am definitely going to try this out. Thank you very much for the video!

I'd love to have your patience. I know exactly that my husband would eat that cheese within 10 minutes. And imagine my face if I spend 1 year or more on a cheese. Your cheese looks incredible tho and wow, how I would love to try it (would be gone in 10mns).

The video is amazing. The cheeses look delicious. You are my hero! I’m going to try them all. Feedback in 12-18 months 😂 I just wish I could buy those at the supermarket. I was visiting Paris, some 3 years ago and there are literally hundreds of vegan hard cheeses in the vegan stores there. Why can’t we have that in the US? 😭
