In this week's episode, Chef Edgar Rico of Austin's Nixta Taqueria is making Chili Colorado, a hearty Mexican dish named for its deep red color (and not, you know, Colorado). Using the Made In Dutch Oven, Chef Rico's version boasts pork shoulder rendered deliciously tender and flavorful with the help of a hat trick of chiles (ancho, guajillo, and New Mexico), a few simple aromatics, and the key ingredient: time. A low and slow braise turns humble ingredients into a comforting stew that packs some heat-but mostly flavor. Get the recipe and tools below.

This recipe looks excellent. I would have never pictured sage in chili, but I must try this soon. I love the simplicity and the use of pork over beef for chili.

I've always made chile colorado with beef. Is the sage more of a compliment for your choice of pork or would you recommend it with beef as well?

Don't tell me you tossed those cilantro stems? More flavor in them than in the leaves. Chop fine and into the pot. I will be making this for the 3rd time tomorrow. Got some local stew beef. Looking forward to it, as before. Thanks for the video.

If you think the stems have flavour. Try the roots. Definitely don’t waste those.

Tip cut off the root end of the onion. It's called the cry zone. Then chop without tears!

I work as a cook and i have heard all kinds of ways to avoid onions making me cry. They all dont work 100% of the time. Ive heard about keeping the root on, some people say cut the root off, some say that having a very sharp knife prevents it too. Ive tried them all and every once in a while, i just get an onion that wrecks me. 😭

The only thing that works for me to keep from crying while cutting onions...before you even handle the onion, put a tooth pick in your mouth, between your teeth, bite on it lightly so it stays in your mouth, then start cutting. You can thank me later. Thanks for this great recipe.

BIG DEAL! with those onion gasses huh? [Ancient trick] Before you start chopping and slicing your onions, and after you've removed the skins, try rinsing your onions in cold water and keeping them wet. That neutralizes the onion's gasses that hit your eyes and sinuses. Works every time!

I'm sure this turned out to be acrid tasting since you scorched the fond and then deglazed the pot with the cooking liquid of the chiles. And then, if that wasn't enough, you used sage. This is also known as Puerco Asado in which sweet spices are used such as cinammon, clove, and oregano.
