COPPER CHIMNEY KI KHAAS BIRYANI
Ingredients
Chicken (12 piece) 1 kg
Chopped Potatoes (deep fried) 4
Brown onion 1 cup
Ginger garlic paste 2 tbsp
Turmeric ½ tsp
Chili powder 2 tsp
Yogurt 2 cups
Whole spice 1 tbsp
Cashew nuts ground 10
Coconut desiccated ground 1 tbsp
Salt1 ½ tsp
Oil ¾ cup
Coriander leaves chopped 4 tbsp
Mint leaves chopped 15-20
Green chilies chopped 6
Saffron ½ tsp mixed with milk ½ cup
Boiled Rice 750 gm
Allspice 1 tsp
Cream 2 tbsp
Butter 2 tbsp
Lemon juice 2 tbsp
METHOD
Heat oil, fry potatoes golden and remove. In the same oil, fry onion light golden and remove, add whole spices to the oil with ginger garlic paste, after 1 min, add dry seasonings with ¼ cup water, add chicken and fry for 5 mins, add yogurt till it boils, add grounded cashew nut and coconut, fry, add 1 cup water, cover and cook for 30 mins till chicken done, add potatoes, crushed brown onion, coriander and mint, green chilies chopped, also add saffron and milk, cook till thick gravy left, add allspice and remove, top with boiled rice, cream and butter, lemon juice, cover and cook on dum for 10 mins, serve with raita and kachoomer.
