You will be surprised, but as famous as chicken with almonds is in Chinese restaurants, I have never eaten it at home.
I don't know if it's a Cantonese dish or if it's an adaptation of a Chinese dish for the Spanish public. Who knows. 🤷🏻
This is the dish you have asked me for the most, but I have to admit that my recipe has been a bit of an improvisation. I know that the almonds are sautéed with everything and that the original dish has no egg in it.
But it's the egg yolk melted together with the chicken, vegetables and rice. Buff... It sounded too good!
And as for the almonds, you can incorporate them into the stir-fry, but I personally like them on top because I like the presentation and I think they stay crunchier.
**Recipe for 2-3 people
*Ingredients: 1 chicken breast, 1 onion, 1 green pepper, 1 red pepper, 3-4 eggs (depends on how many of you there are), 1 handful of almonds, soy sauce, 3cs cornflour, 1/2cp curry, 1/4cp black pepper, olive oil and salt.
*Preparation:
1. Cut the chicken into thin slices.
Mix with 1/2cp salt, 1/2cp curry, 1/4cp black pepper, 1cs cornflour, 2cs oil and a dash of soy sauce.
3. Leave the above mixture to marinate and chop the vegetables.
4. Sauté the chicken for 4-5 minutes and set aside.
5. In the same pan, sauté the vegetables for 3-4 minutes.
6. While the vegetables are sautéing, take the opportunity to prepare the sauce. In a bowl mix 1/2 cup of water, 1/4 cup of soy sauce and 2cs of cornstarch.
7. In the frying pan where the vegetables are, add the chicken and the sauce mixture.
8. Lower the heat to the minimum and keep stirring until it thickens.
9. Chop some almonds.
10. Make a grilled egg.
And plate it up 🤪!
