These are gold thread noodles (no relation to Goldthread). They’re so thin that you can run them through the eye of a needle. And they’re only made for special occasions.
We went to Sichuan in southwestern China and met one of the few chefs to master the art of making these delicate noodles.

@@jordanallen3078 I believe the extra height makes it easier for the left hand to guide the knife, keeping it perfectly straight to allow for the thin slices.

Oh! I knew someone who was obsessed with goldthread noodles. So much so he made a measuring maching for it. You still have to cut it and such but atleast you wont have to eyeball the thinness. He made it using a pasta roller and a caliper with a big knife attachment on it. There's a reason why the knife is so huge. It has to be really heavy and terrifyingly sharp in order to produce the thinness. He's not willing to share the measuring machine, though. He says that the machine, if shared, is going to invalidate alot of people's hard work.

Actually it makes sense to use a big knife. The sturdiness of the knife can prevent unnecessary wiggles of the hand. The noodle is so thin, a small wiggle can ruin the evenness of the noodle. Of course, it will take much muscle training to work with the knife.

The pronunciation of “四川” in Mandarin is simply “SiChuan” where "ch" is pretty much the same as in English. The female narrator pronounced it as "SiTsuan", which is incorrect in Mandarin - I'm guessing she might be 1. Cantonese and tried to pronounce “四川” in Mandarin, but despite she pronounced the vowel "uan" as in Mandarin correctly, she pronounced "ch" as "ts" becasue "ts" is the consonant for "川" in Cantonese. or 2. trying to pronounce it in the SiChuan dialect.

Are you sure? Her pronunciation is exactly how you would say it in mandarin to me. The "ch" romanization does sound more like a ts sound.

@@DaylenAmell i'm a native speaker too, though i have a Taiwanese accent and we soften the ch which makes it sound like a ts sound. Accents exist and i forgot lol.

I don't know which is more exquisite, the noodles or than wonderful knife! I make noodles faily often. I'll have to use just yolk next time, and get a capon for the broth.

I like food made by hand. Somehow, it left the outside texture rough and when it cooks it gives the either delicious crunchy for cookies,or crispy for fry food, or texture that absorb more soup base if boiled.

To those who haven’t had castrated chicken. They take a lot longer to raise and taste much better than typical farm raised chicken: juicy, rich, fatty and full of flavours. The texture is also a lot better, at least for my asian taste.

Chineese are so often very traditional and original. This makes their culture very rich and original, but also give questionable tradition value at some thing. Some of them already banned like feet folding. The blade ancestry is one of the traditional chineese value that a master will give his blade to his disciple. Never know i could still find it in modern world, from a cooks.

The translation for the recipe is wrong. It's 4 egg yolks to 200g of flour. 200g of eggs to 200g of flour would make the dough become too wet to be useable

Neat, it's cut like soba. That knife looks like a pain to use though. Weird that it doesn't resemble what the Japanese use which looks a lot more ergonomic.

It's unlike the soba cutter which cuts in blocks. It's a guillotine-style cutter to which the weight of the blade itself is essential. Watch the video carefully - the tip of the knife never leaves the cutting board. It works more like a paper trimmer.

The way the chef speaks Chinese is quite refined and eloquent. Sorry, but the translation leaves much to be desired: not only it fails to convey the richness of expression the chef is employing, but it is also incomplete and imprecise.
