I make home made noodles like this often but the addition of baking soda is new to me. For every egg the recipe calls for, I add a teaspoon of cooking oil to the dough. The dough doesn't dry out so quickly 😊

Normally it's not baking soda (sodium bicarbonate), but soda ash (sodium carbonate). You can get the latter by cooking baking soda in the oven for one hour.

Correct. A little Lye Water added always makes the noodle chewy. Baking Soda is relatively weaker so it's better to use Lye Water.

We see those HK or canton hand made , they use a long bamboo the flatten them in to noodles, how many times can you roll? The more will it be come rubbery too hard too chew? Or the more times rolled the texture are better?

if you don't have a pasta roller/cutter, another option is to roll out the dough and dust it liberally (like she shows in the video). Then loosely roll the long strip of flat dough like a jellyroll, and use a sharp knife to cut the roll into thin slices. Shake out the slices and dust them so they don't stick to each other. It takes a little longer and it's not as consistent in sizing, but you can do it and it will work for you.

Also, you can roll with a rolling pin. Then jelly roll it. Then use dental floss or thread to cut in half, half again, etc. unroll long noodles

Made it yesterday, parents loved it yay! [Self notes] Great for stir fry but no so much for noodle soup (I made it too overcooked) my dough was too dry and there was excess dry bits of flour(perhaps my egg was too small) I added a splash of water to help incorporate it as best as I could. Split into 5portions Stir fry sauce ( 1tbs Soy, less than a tbsp Dark soy, 1tbs oyster sauce, pinch of sugar) One onion, 4cl garlic, one small onion, spring onion) [March 2024)

Question! Usually the Cantonese style egg noodles have a distinctive flavor that lends them perfectly for pan fried noodles. That "distinctive" flavor is critical! How is that achieved? Do you add alkaline to the dough in the process?

did you boil them with baking soda in the water? i am on keto low carbohydrate. could you make these with a low carbohydrate flour? maybe lupin flour or seeds flour or low carbohydrate wheat flour like carbalose. can you make using vital wheat gluten flour and oat fibre flour?
