Preserved salty lime soda is a classic Hong Kong drink that will beat the heat and is also a magical cure for sore throats (minus the 7UP of course haha).
This drink is refreshing, it's salty, tangy, citrusy, and sweet! You can also mix the preserved salty limes with warm water to heal a sore throat!

PRESERVED SALTY LIME SODA - 6 servings

3 Limes
2 Cups Water
1/2 Cup Salt (any salt is fine)
3 oz. Ice Cubes
12oz can of 7UP (for HALF a lime)
- In the saucepan, bring water to a boil and blanch the limes for 10-20 seconds. This will help break down the cell walls so the salt brine can penetrate more easily.
- Remove limes and set on a clean table or plate.
- Leave the limes out in the sun to dry for ~4 hours or until they turn brown in color.
- Using that same pot of water, add salt, bring to a boil, and cool completely.
- Grab your glass jar that has a lid and tightly pack in the limes. Ensure there is enough salt brine --liquid to cover the limes completely, otherwise make more.
- Close the jar and label it with the current date. Ferment for AT LEAST 30 DAYS, the longer the better.
-Store in a cool, dark place where the sun can't get to it.
- Open the lid every few days to release gas build-up.
- After a minimum of 30 days, it's time to taste and enjoy!
- Use clean and dry utensils when taking out the limes to prevent contamination or spoilage with the other limes in the jar.
- Cut half a lime, place it in a tall glass, and smash it a bit with the back of the spoon to release the juices.
- Add in ice and fill the glass with 7UP!

The better method is to cut the lime half into slices and use your pestle to press the juice out. I personally use a cocktail muddler but that is one way to easily juice lime if youre not using a lemon squeezer

What's the guess on the weight on the salt?? Using volume for salt is not ideal because different salts have different sizes.
