Quick tip, galangal can be sliced and frozen. It won't be as strong as fresh when you defrost the tiny galangal discs but it works. Growing up in Singapore, my mum used to make Rendang from scratch with frozen 'aromatics'.

I freeze my tofu.....so you don’t have to use it up. Just wrap well, either whole or in bits.....and freeze! Wonderful place that Chinese supermarket!

You can freeze galingla like you would freeze ginger. So if you wanted to get some next time, and then use it as you want.

We get frozen brown sugar coconut steamed buns from our Chinese supermarket, very nice and can be done in the microwave, great for a small sweet treat of an evening! Don't know what the brand is though, sorry. Looking through quite a few at ours were accidentally vegan 😊

Also lots of the snacks are vegan, plenty of tofu based snacks, some of which have actual meat textures (deffos vegan though!). I spend ages each time I go checking ingredients 🤣

I store my galangal, ginger, and lemongrass in the freezer! They keep well and are easier to grate from a slightly thawed state[5 minutes]. Enjoyed this walk through that store; I'd be like the Tasmanian Devil from the Warner Brothers cartoon in that store, LOL! TFP : )

I go to sing kees in Leeds and it's great. Not going to lie, wing yip looks better. I have friends in Manchester and family in Walsall so when I next go see them I'm slotting an extra hour on my trip to I can get some of those frozen goodies too!
