Could you please write a book with all your tea knowledge? I'd totally buy it and I'm sure many others would. A definitive technical guide on the science of tea, tea making, tea Brewing and history.

Or just translate the Chinese Tea Book 中国茶经, aka the text book for agricultural tea majors in Chinese Universities, written by the only national academian in tea study Chen Zongmao. covering everything from genetic variations, fermentation process microbiome culture, enzymatic biochem pathways, to culture and history. 2000 pages, giant of a book, strongly scientific style writing.

Hahaha, I watched that first because of your comment and you're right, it's hilarious. He's so oblivious of interrupting. I think I'd rather see that reaction than if he had been suddenly surprised and embarrassed and tried to get out of the picture quickly which is what most people would have done. He could have cared less.. The advantage of age.

I am a Japanese tea fanatic living and working in Shanghai for the last 20 years and I have to say you are one of the very few "westerners" who really make an effort to the original destination to pay respect to these beautiful teas, well done !

@@horrudu4081 Have you been to a family farm before? Children often join in to learn or for fun. This child picking so slowly is obviously not being exploited.

@@horrudu4081 Bruh that is such a coddled urbanite thing to say. Some kids just like doing what everyone else is doing, and so it is on a tea plantation. This particular kid clearly couldn't have been a child labourer, because he wasn't doing any labour. He was taking his sweet ass time and had a tiny ass plastic bag. The economic benefit of that labour would've probably brought his "employers"(read "parents") a cup of coffee.

When I first travelled to China in the '80's the only place that had white tea was the Fujian. It was fairly inexpensive at that time. Now the prices are just crazy. And so popular in China! Funny how tea evolves over the years.

I love your videos of your trips to China. It's even better than being there, because I could never just walk through the tea fields and through the factories. I know white tea is popular, but I've never been able to fully appreciate it. Less flavor, fewer infusions, and more expensive. Maybe a good aged example will change my mind, but if I wanted to go that route, I'd prefer an aged pu-erh any day.

Fabulous education in tea. Love this guy! Side note-watching during covid, noticing he grabbed a handful of tea off the automated conveyor with his bare hands, brings it to his nose, then returns it to the processing pile!

Good to hear someone with a real palate for tea like yourself also find leaf preferrable to bud, at least sometimes. I tend to find the best white teas produce an orange brew, not transparent brew like water. Well, in my limited experience.

Thanks for making available this excellent content. I was fortunate to visit two producers of white tea in Zherong myself earlier this year. I think I even spotted one of them (his name is Lin Long) in the trailer at the beginning of the video. Is the second part coming soon? Hope to see more of him then.

I have a question not totally related to tea, but why is there a Mongol yurt and a mongolian like ovoo or altair in the tea company yard at 33:22? Is this related to Khubilai invasions and Yuan dynasty ins 13th century, to exchange of tea with Mongolians or somthing related to Mongolian there today? Thanks a lot again.

When brewed it, it give a very pale, champagne-coloured liquor that has a very light, soft, sweet, velvety flavour.

Great content again! I just have a question regarding the child labors in tea farms, as we can see a young guy picking up tea leaves at 37:30 . I don't make any judgement in my comment as I can understand that the daily life of tea fields owner can be hard. Is it common to see that? As I currently work with Chinese factories I know that some social audit exist for factories, is it the same for tea farms?

I really enjoy these videos. In light of the current pricing regime for white tea, was there ever a time that excellent white tea was available at reasonable, perhaps scandalously low, prices? If so, are there great bargains for tasty tea out there right now that teaheads should be taking advantage of? Inquiring minds want to know.

I have had similar experiences with white tea..... I live in Shenzhen and we have a tea expo every year, every year I go to find new interesting teas! I have found Fuding baimu is really fruit/custard/rhubarb/berryish. For me, its the most pleasant white tea I have bought, on the other hand, the white tea I tried from Yunnan was very.... astringent and green, not to my taste..... Its interesting though because I had white needle and aged Shoumei that were from Fuding, always very custardy and berryish.... every time I drink Fuding white tea its excellent

The tea creation in those factories is very reminiscent of Japanese tea production. Very different from things like puerh manufacturing in Yunnan

Hi Don! I recently purchased Sunfire Ripple and found it very sweet (and absolutely delicious) but it really made me want to ask you a question. Why are some white teas so sweet? Is there any science behind this? Would love to see a video about this and the reasoning behind it - I've read some studies about different compounds, but haven't been truly able to understand what makes that syrupy wonderfulness happen. Thanks 🥰

I have a very important question for you Don, that is not exactly clear to me. Are all white teas (especially bai mu dan and silver needles) suitable for aging? If not, why not? And if not specified from the seller how would you know it was suitable for aging or not? I just yesterday made a purchase from your shop, but not all of your white teas specified whether they were suitable or not. Sorry for the rather lengthy question, but I thank you if you take the time to answer

I’ve been drinking Twinings white tea for at least 5 years. When I change from it I always come back to it. It keeps me awake all day without feeling like I drank any caffeine. It also seems to keep me in good spirits and keeps me feeling healthy. I have not had many supposedly better quality teas and when I have, I didn’t notice any reason to pay more for tea. Could someone please tell me why people pay more for their white tea than what I’m paying for Twinings? What am I missing out on? Thank you

Twinnings is okay, just like Starbucks. To me twinnings is a little bit bland, lack of the sweet taste and aroma of white tea.

Hi Mei Leaf, Do you notice that the effect of White Tea is typically more calming to the mind than Green Tea? I know in an earlier video you praised white tea for being more meditative. I know for me personally white tea, particularly Silver Needle and White Peony have a calming effect on me with a touch alertness whereas green tea has more of an energizing effect with a touch of calming. Thank you

Awesome, educational, wonderful! I think I asked this before, but would it be possible to get names in Chinese characters in the future, as well? I find greenification (and budification of green teas:) of white and yellow teas very alarming. I keep asking tea farmers and sellers all around China why this is happening and they tell me that that's what people want. I am telling them to educate their customers about how to appreciate those kinds of teas, instead of just having them all turn green. Most of them just laugh and tell me to try telling Chinese customers they are doing something wrong myself and see what happens. Sad. White tea is still going strong, but I am afraid many yellow teas are disappearind. Yueyang, good yellow tea is hard to find. Huo shan extremely difficult. Mo gan I couldn't find any. Ya an is the only place it seems to be doing well. Haven't watched your yellow tea videos yet. Will do that soon.

Your water temperature is probably just too hot.

@@Troglor048 Sometimes. And sometimes to cold, i think. No kind of tea makes problems, only White Tea, it feels for me, i need for every infusion (gong fu) different temperature.. . I recieved some Bai Mu Dan yesterday and have enough know to figure it out with the temperature.. ;-)

Try 90-95c. If very bud-heavy, a little longer in the first infusion (45 sec for Ying Zhen, 15 or 20 seconds for leafy Bai Mu Dan). Good luck! Otherwise, go to the Meileaf website for detailed instructions. Good luck!

@Mei_leaf, I'm confused. I thought white was a decent seller, not as much as green tea in China, but with the way it sells in America, like the silver needle and white peony, I never would have thought it wasn't popular in China, the country of origin.
