Chinta chiguru mamsam, a classic dish from the Andhra cuisine, meat cooked with tender tamarind leaves. It has a unique taste and freshnes in the dish. Chinta chiguru" is a highly recommended green to all the nutrition-conscious. ... Chintachiguru pappu and Chintachiguru Mamsam (meat). Ingredients

Ingredients
1 tsp Coconut grated
1 bunch CORIANDER LEAVES
1 tsp Coriander Powder
1 tsp Ginger Garlic Paste
1 TSP Jeera
1 bunch MINT LEAVES
1 Tsp Mustard Seeds
500 grams mutton
1 tbsp Oil
1 big ONION
1 tsp RED CHILLI POWDER
To Taste \ SALT
500 grams tender tamarind leaves ( Chinta Chiguru)
PINCH 0 Turmeric Powder
Directions
● Take pan add oil, mustard seeds, cumin seeds, whole garam masala and then add chopped onion mix well,then add turmeric, ginger garlic paste mix well and cook for few min then add coconut powder,then add lamb mix well add little water and salt, coriander powder, chilli powder mix well and cover with the lid and cook till the lamb is tender. you can also use cooker to cook lamb.
● once the lamb is cooked then add the tender tamarind leaves mix well and cook for 5 min till the lamb is dry.
● once it is dry switch off the flame

wow my eyes stained...my mom used to cook this curry .From my back yard I used to pluck these leaves. Really Andhra curries are awesome.

Fabulous! There are very few good ways to prepare lamb in the US--same old roast, chops, and mint jelly. Ugh. This will be beautiful. I've had great luck finding ingredients online, just in case you don't have Indian groceries in town. Don't order fresh herbs--get the jarred tamarind leaves he mentions. I ordered curry leaves once, paid for shorter shipping time, and they still arrived moldy. But everything else has been perfect.

i am not sure people add cumin and mustard seeds for non veg dish..

wish you could show some venison recipes as i like venison. made venison kheema the other day which was nice but would be interested in what you can think of for cooking venison the indian way. tried out ok the last time i cooked it but reaalllly want some indian recipes for cooking venison as i think it tastes much better than lamb or goat meat with less fat with a more gamey taste.

you get Tamarind powder , they dry the leaves and powder them , but not as good as fresh , but what to do something is better than nothing . So I use the powder. but this is my husbands favorite curry.

use soy protein (also called nutri nuggets in India!), it replaces meat in every aspect (i.e texture, nutrition and taste!!!)

Try Mushrooms or eggplant. Tofu is bland all by itself and doesn't do justice. Portabello mushrooms work as a great substitute for meat. You can pretty much try all meat dishes with it.
