Exactly. Pretty sure he's just switching cocoa powder for black pepper since the Romans loved black pepper. Doesn't make sense as a substitute. I love cocoa powder as a spice (amazing to add a little to chili) but this? Nooo.

Not sure about chocolate and anchovies but love the concept, I’m assuming the dark chocolate and salty ness of the anchovies create such a balanced flavor.
