Thanks Heidi. That color difference is the chocolate "bloom" that is on your 2014 chips. There are two types of bloom - fat bloom and sugar bloom. Fat bloom is the result of temperature variations to the chocolate and so the cocoa butter melts and separates and doesn't return to its former state. Instead the cocoa butter rises to the top and forms that whitish coating. Sugar bloom is the result of excess moisture and so the sugar in the chocolate crystallizes and rises to the surface, forming a whitish coating. Fat bloom is the most common type. Many folks think their chocolate has gone bad or has developed a mold, but it is perfectly fine to eat. I've had chocolate stored in containers for years with bloom all over it and it is great for baking. Have a great week!

@@valh9858 .. thank you for this information. I just started storing chocolate chips, chunks, bars, cocoa. Anything I might need to cook with. But I didn't have a clue how to store them long term. I did put a bag of chocolate chips in a mason jar and they have lasted very well. The Baker's chocolate is still in the original package. I'm afraid to open it! 😬 Haha

I did a review on a Facebook page on long term storage foods. One product had M&Ms in it, and after 20 years, the M&Ms turned to powder. Eating 10 year old MREs, M&Ms are starting to show their age, so i would say milk chocolate tends to have a actual shelf life of about 7 years if packed for long term.

Choc chips last less than a week in my house, even when I hide them, every time I go to use them ... gone, with 3 very guilty looking kids. This should slow them down a little bit,.... never thought I would have to pest proof my choc chips from my own kids lol.

Love this video, I’ve wondered how to store it long term. One thing I’ve learned eating food from the military (MREs ect.) is never underestimate the desire to have things like chocolate, sweets and other foods that are considered non prep type of foods. Beans and rice might keep you alive but people will beat someone for taking their skittles or a chocolate bar 😂.

That white coating on the chocolate can happen to chocolate within the 'best before' date. I remember buying some 70% Green and Blacks and it had that same white coating, I wrote to them and they wrote back to me saying it's a natural process when it has been sitting on the shelf and is harmless. They sent a load of vouchers as well 😊

Wow, I learned something I had no idea a Brake Bleeder could be used like a food saver on jars! So much cheaper than buying a Food Saver! Thanks, Heidi. I have 2 favorite people I like to follow, and you are one of them. I just vacuum sealed several jars of those little Swiss dark chocolate bars you can get in large bags at Costco.It worked great. They are individually wrapped, but loosely enough to get all the air out. Love your videos, and your cheerful manner.

I made this comment under another video. I am so glad that you brought this to my attention. I have a bag of chocolate chips that I can’t eat so I forgotten about them. They’re not very old, about nine months. So I’m going to get them sealed up in the jars along with some of my spices over the next couple days. I purchase from the Santa Barbara chocolate company. They don’t have any soy vanilla GMO nothing in the chips. I also love their red vegan cocoa powder. It is out of this world. As I was talking to another commentor about mixing up my own chocolate now with maple syrup. It truly is delicious. It has made it completely possible for me to get off of the other types of sugar. The only sweeteners I use are honey and maple syrup.praise Father God in Jesus name!

Just tried my break bleeder. Thanks for the tip to keep pumping till the needle stops my regular canning food Saver always unsealed my jars when I removed it. Now it works yea! Also I have been using nine canning jars for herbs the food saver jar sealers don’t fit so I tried my food saver vacuum canister 4 qt it worked. I placed my jars in the canister and pumped the vacuum up to 15 lbs. when I removed the break bleeder and rotated the lock top to open I could hear the tops clicking sealed. Just thought i would pass this on to others who don’t have enough canning jars. I realized new this canister is expensive. Found it at goodwill still has the price sticker $3.50 it pays to frequent resale stores. 🤗

We live in the mountains in Colorado. We sometime have power outages. The brake bleeder let's you continue vacuum sealing should this occur. Great video. Thanks!

SOOOOOOOOO MUCH! pre-plandemic i had a home based candy business. i have 80+ lbs of the best chocolate (callebaut - very expensive!), and i've been worried about what i'm going to do with it. the chocolate "experts" claim that chocolate cannot be saved. i've been planning on vacuum sealing it anyway, because what do i have to lose?! thank you for giving me hope!

It *can* be stored in the freezer, though you have to be careful not to introduce moisture as the chocolate comes to room temp it collects condensation. as I'm sure being a candmaker you know that water and chocolate dont mix. Also you'd have to 'thaw' or temper the chocolate so you dont ruin the texture of the frozen chocolate

Thanks for the info on the brake bleeders. I use canning lids for canning then save them. I use painters tape for labeling them for use with the food saver. The older lids are much better. Rarely have one fail. I do agree with you on the OA's... not a fan. And I always use a ring for the vac sealed ones. Have you looked into freeze dryers? See you dehydrated some meat. I bought one and it was pricey, but it is paying for it's self. Love your vids.

Dont expose to light especially UV or even artificial. Usual cool dry place, for the best results you can even freeze them but of you use them straight out of the freezer the condense moister from the air and tend to ruin the texture so consider leaving them in the fridge for a day or two to come up to temp

I got 90# of milk & dark kosher chocolate for $20. Been working on getting it all stored away without using the freezer(need the freezer for other items). I don't eat tons of chocolate, but it was a deal I couldn't refuse. Thanks for the info Heidi!

Chocolate chips, or butterscotch flavored, are great to add to rice to flavor it, or oatmeal, or anything else you might add a bit of sugar to so it would be sweet. I vacuum pack dark chocolate as it tends to last longer, and also do some Reese's Pieces.

I’m told that whitening of the Chocolate is called blooming and it’s just when the sugar starts to break apart from the chocolate it’s not ruining it it’s still really good

As I said in the video, I have tried it in the past, some work great and some do not. I will have an update video on this coming out soon as I just shot it last week. I have some things I have vacuumed sealed with the wide mouth Tattlers that have stayed sealed for 6 years.

Wash your mouth out. Chocolate is a necessity for life - trying to figure out how to grow it in my greenhouse :-) I am an avowed chocoholic. I just keep mine in the bag they come in until I need some and then I put a number of packages in an air tight canister. They have never gone bad? Did yours go bad?

Congratulations! That’s great. My tomatoes didn’t do very well this year because we’re in the process of moving to the country and I just wasn’t there enough. My brother lives close and was in charge of watering them as he forgot. 🙄☹️. We did get enough to have fresh ones to eat. Next garden will be better hopefully.

You can make your own oxygen pack - steel wool and salt - take a ....2 inch square, (or multiple)depends on size of package, rub the salt thoroughly into the piece of steel wool and thats it. Wear gloves when rubbing the salt into the wool.

After going through several food savers I got a “Foodsaver” by Tilia. It’s a workhorse and will vacuum seal Mylar. Just FYI. :-) thanks for the info on chocolate!

I never would have thought of storing chocolate chips. I’ve been adding “treats” to my long term storage items and I’m going to add this to the list. As you were talking about the different things you make with the chocolate I was thinking a cook book with your recipes would be good to have. Just a thought...

Just keep checking back, they do keep going back in stock on Amazon and FoodSaver.com. Amazon usually still gives you the option of purchasing them if they are "Temporarily out of stock" and know they will be back in. They do not charge your credit card until they ship

I'll be putting up my choc. chips. one thing I did was just remove all the rings off my sealed jars. I had read it's easier to see/find jars that have become unsealed..before I did tighten the ring down thinking it helped? I guess I'll put my rings back on ;)

Removing the rings from jars only applies to pressure or water bath canned goods, not vacuum sealed goods.

Thank you for this video, Heidi. It's always a joy and educational watching your videos. I may have to use my vacuum sealer bags for my chips because I'm very low on jars as well. I followed your video of dehydrating and vacuum sealing ground beef, and it worked great!!! and when I re-used the beef, it was excellent!! I tried doing the same with chicken, but the end result was not good....chicken was tough as leather. I even cooked the chicken (twice) in my Instant Pot, and still could not tenderize it. Did I do something wrong? Some people say that the chicken should be pressured cooked first then dehydrated...that's exactly what I did. When I saw you hold up your can of dried chicken in this video reminded me of my chicken. Any advice? Have a great day....and thanks for everything you do!

I am still experimenting with mine. So far I have only used it for chicken fried rice. I tried rehydrating it first before adding it in, I figured it may not work great but still wanted to try it. While a little dry, it was still very tasty. I am going to be trying it soon in my Chicken Fettuccine where I can cook it in with the sauce and see how that goes. If nothing else, it should do well in a soup or sauce that cooks all day

Crystal Patton... do the chips have moisture on them when you take them out of the freezer? I stuck a large bag in the freezer from Costco the other day, but I'd rather vac seal them now. Was worried about moisture on them after freezing. Thx in advance!

@@sandij.1888 I have never had a problem with putting them in thier ypu can also put thrm in a container and stick them in the freezer and I have some in a vaccum seal bag but I got vaccum all the air so that way they don't stick together

Do you have a link to the brake bleeder set up you use? And do you have a cookbook for sale that not online only? Don't know if you've seen them or not, Marlboro put out some cookbooks back in the 90s. Good recipes in them. Thanks for your canning and dehydrating videos. Watched a few and subscribed. Questions my very wise one😁 I saw you did some chicken there how did you do that and how long does it last in the jar dehydrate wish I could afford one of thous freeze driers but dang their in the thousands just about dropped dead when I thought to myself that’s more expensive then my car haaa but love to know how long it lasts that way and your technique please And yes God is very Good especially with such amazing helpful people teaching us like you. I will link you to two videos but know that since dehydrating that chicken I found by accident the best way to do it is freeze it first, then dehydrate it, it turns out crispier and easier to rehydrate. They will likely last quite awhile without vacuum sealing but the vacuum sealing will keep them fresher.

Yes, you can, and I will be doing a video on that as well soon. In that case, I do recommend using an O2 absorber unless you know a good way to vacuum seal mylar. I know it can be done and there is a trick to it but never mastered it myself.

Rain Country Does it have to be Mylar bags? I am getting low on jars, so I vac sealed mine in vacuum sealer bags instead. I wondered though about them sticking together if they got the least bit warm. I didn’t use an O2 absorber (don’t have any).
