I loved these! Quick tip: Put a Ziploc bag in a cup and fold down the top, put the PB in it, seal out the air, and snip off the edge to make a piping bag. Just put a dollop on each cracker and smash it down gently with the cracker on top! Goes so much faster! We did Heath topping, some with Maldon sea salt flakes and a few with the white chocolate!

These look really nice Matt. I don't like peanut butter so i put a Rolo between my Ritz crackers and bung them in a hot oven for about 3/4 minutes until Rolo is squidgy and skooshy. When they cool i dip them in the chocolate. How long do these keep once made? Do you keep them on the counter? Can they be frozen in advance once assembled?

If you use real chocolate you will need to temper the chocolate if you want to leave them out on the counter in an airtight container otherwise store them in the fridge or use a chocolate like the "candy melts" which don't need to be tempered. Yes they can be frozen as well.

If you want to set them at room temperature I recommend using the candy melts for the chocolate, otherwise if you use normal chocolate you will want to temper the chocolate first before dipping. But yes they can definitely sit out at room temp, in a covered container or just plastic wrap over them on a plate.

This is a perfect project to get children to do. But remember to be aware if they have a peanut allergy because of the peanut butter you use. Kids would have fun helping you out on this if you invite them to do this with you. They may eat a few Ritz crackers along the way or a few chocolate chips or pieces of almond bark. Such a fun project for them to do. This summer might be a perfect time for them to do this project to celebrate Christmas in July.

Awesome! Yes they will be amazing with Caramel. And will taste very similar to a TWIX or Millionaire shortbread. Like super yummy. One person mentioned used a Rolo in the center. Just place the Rolo where the peanut butter is. Then pop it in the oven for about 3 to 5 minutes so the Rolos get soft. Then place the top cracker on and proceed from there. :)

@@inthekitchenwithmatt it was some compound chocolate. I wanted a bit softer bite of chocolate so I added some 5 or 10ml of milk before the chocolate melted. I've realised the mistake now after googling. I didn't know milk could do that.

I said in the video it doesn't matter what chocolate you use. :) Use whatever chocolate that you want. If you like semi-sweet chocolate chips use those. If you like Milk chocolate Hershey bars, use that. If you like the yellow candy melts, use them.

Interesting. Yeah European countries don't like trans fats, specifically partially hydrogenated oils. The interesting thing is the actual label on the box of Ritz crackers shows Trans Fat as 0g. At least the box in the States shows that. The one in Canada has it at 0.1g. Seems like they could get sued for misrepresenting something on the label. For me personally, I don't worry about that stuff, it's not like I eat them every day, and they sure are tasty! haha
