Beautiful, a masterclass. One point, though, this is a choux pastry, not a puff pastry, which the screen text showed. Puff pastry is the laminated flaky pastry used for milles feuilles, etc.

This is awesome, I made it today and it came really well. The pastry is 👌, I didn't have heavy cream so I used custard as the filling but it's still delicious. Thank you @hidamari you showed every thing in detail and clearly, this is my 3rd time trying your recipe and all of them came really well. Looking forward for some more delicious recipes😊

How can you make a eggless version? What substitute to use ?

You can see multiple versions of eggless puffs from yummly's website. Just google/search "eggless cream puff yummly" and it can give you many answers. I usually use aquafaba or apple mushed as substitute when baking anything sweet for vegan. Egg's purpose in baking is to create the bubble foam, to work as glue and to raise the mass of the food when heated. Anything that can give these effects can be used or tested - baking is chemistry, kitchen is your own laboratory! 🌸😊
