That was about the most perfect apple pie I have ever seen. Best filming too. No yappin, no distracting music. Just a food artist practicing his craft. Very well done all the way around.
If you want a firmer inside or tarter taste, save the skins and puree them, then add some of the skin puree to the filling during the filling cooking stage. The skins have the bulk of the pectin and will jelly up the filling. When I make a pie, I use about 3tbsp of skin puree and it gives the pie no discernible texture changes, but holds the fillings inside the slice during cutting and consumption nicely.

It also works to add 1/4 cup of plain bread crumbs.

to have a bottom crust that is completely done place a clay baking pan in the oven while it heats to baking temperature and place your pie on the clay pan. this will help the bottom crust to cook and brown along with the top crust.
I make my apple pie with raw apples, cut quite small. I mix them with sugar and cinnamon, dot with butter, and add the top crust. They come out fully cooked and tender, and the flavour is intense. Another way to try. :)

How interesting to watch and how different to the way I learned to do it. I would love to taste your apple pies. I always thought, because I was taught, that when you make pastry, you have to touch it as little as possible. You have to sift the ingredients with your fingers, lifting the flour and fat up into the air to allow air in and to keep it light. Then, using your fingers you gently rub in the fat until the mixture looks like small breadcrumbs. The less water you add, the shorter the pastry will be. I was therefore surprised to see you squashing the lump of cold dough and pressing it with your hands. I've never seen that done before. Thank you for showing me this alternative way to make pastry. The results look very professional :)

crazy how a pie can look the same, but be made in a completely different way! The apple pie I'm used to has a much softer dough with a lot of butter and eggs, and much firmer apple filling, since they aren't cooked in advance, just left to sweat!

I’ve never seen an apple pie where you cook the apples first. I’ve always put them in raw after tossing with sugar and cinnamon, a squeeze of lemon and dot with butter then put the top pastry on. I’ll have to try this method. Your pastry sounds wonderfully crisp after it’s cooked. It looks wonderful.

Apple Pie is a British classic and one of the first things I ever learned to cook. Typically in Britain, we use large cooking apples like Bramley apples. Which most people don't bother eating raw. The best Apple Pie here is usually served piping hot, either with vanilla ice cream or custard. It's a great dessert to teach kids to make too because it's very simple.

The original pie originated from the ancient Egyptian "uten to" and Middle Eastern "baklava" of the Greek and Roman periods. Suggestion - try mixing the cinnamon powder with the sugar first to evenly distribute it on the apple slices. I love the recipe and it is certainly a must try!

The apples are indeed overcooked, they have to go in the stove too..BUT the next time you make an apple pie try to add hazelnuts crushed into the apple pie, and on top of the apple pie as decoration, finishing the top with apricot jam. This will give it a nice sweet jellyish coating, but not too much, the hazelnuts must stay somewhat crispy. I ate this apple hazelnut pie always in my hometown when the ecommerce had not destoyed the downtown stores in our town...
