Any last minute holiday shoppers out there? If you're trying to avoid the crowds but still want something special, you can't go wrong with a chocolate treat to brighten anyone's day. Truffles are especially quick to make, low fuss, and only take a few ingredients which make them friendly on the wallet. Incorporating bits of crystallized ginger provide sweet and spicy notes that perfectly complement the bitter dark chocolate. You can go heavy handed on the ginger like I did, or skip it completely if it's not your (or the recipient's) jam. To dress them up, you can keep it simple and straightforward with cocoa powder or coat them in a thin layer of chocolate for a crisp shell around a smooth and creamy filling.
Makes 15 truffles:
4 oz. dark chocolate, chopped
8 oz. heavy cream
crystallized ginger to taste, finely minced (I used ~1/4 cup)
Heat cream until just boiling. Pour over chocolate and let sit for 30 seconds. Stir until combined. Add ginger. Set in the fridge until firm. Scoop about 1 tablespoon of the chocolate ganache for each truffle. Roll into balls and coat in your desired coatings. I like to top it off with a bit more ginger to indicate that there's ginger in the candies. Enjoy & happy holidays!
