I had to buy the large size (1 litre) of whipping cream because the store was out of the smaller sizes and it expires in a week. I can't use that amount for only myself by then, so appreciate your ice cream recipe. I prefer not to use eggs this time so like that you did without too. I like that you started to whip the heavy cream and will do that because it makes the mix thicker. I will be using my ice cream maker. I think the ice cream mix is very forgiving and as long as it comes out like a thin pudding and the ganache tastes good as is, it will taste good frozen too. Basically will be following your ingredients but do not have the dark chocolate so will use a combination of chocolate chips, baking chocolate, and cocoa powder just to get a triple whammy of chocolate. You should try whipping it for some more time....cool and re whip to get that light texture is a lot of work even with the whipping cream...but definitely worth it
