It's compound chocolate or Belgian chocolate shortening and butter. Use powder food colouring.

My recipe is 400g white chocolate compound or Belgian chocolate. 100g shortening, 50g salted butter, Melt chocolate in microwave gently on low setting to 40 degrees, Add shortening whisk well until combined. Then add butter mix well. Never add all at once disaster. Put on a flat tray to cool room temperature then refrigerate. Bring out of the fridge 2 hrs before using. This is for hot humid temperatures. If its cooler where you are then switch to 100g butter and 50g of shortening. Then add powder food colouring to make the petal colours.
