Ingredients:
Filling
8 oz cream cheese softened
1/3 cup sugar
1 large egg room temperature
1/8 teaspoon salt
1 cup semisweet chocolate chips
Cupcakes
2 cups sugar
2 cups hot water OR hot coffee
2/3 cup canola oil
2 Tablespoons white distilled vinegar
2 teaspoons vanilla
3 cups all purpose flour
1/2 cup baking coco
2 teaspoons baking soda
1 teaspoon salt
Cream Cheese Filling : In a large bowl beat the cream cheese sugar and egg until fluffy and smooth. Gently fold in the chocolate chips. Set this mixture aside for now.
Chocolate Cupcakes : Preheat your oven to 350 Degrees. Line muffin trays with cupcake liners. set aside
In large bow mix together the flour, coco, baking soda and salt. then add in the sugar, hot water OR coffee, oil, vinegar, and vanilla. mix well. Fill the lined muffin cups about 2/3 full and then add about 2 Tablespoons of cream cheese mixture on top of each muffin batter.
Bake for about 10-15 minutes.. muffins are done when toothpick inserted to the MUFFIN comes out clean. Don't stick the toothpick into the cream cheese mixture to test if its done. Let them cool in the muffin trays about 10-15 minutes. then transfer to wire rack and let them cool completely before storing them.
