I've seen the frothy coffee a few times already with some very talented cooks and video editors, but nothing beats the Hidamari Style. I also noticed the spatula color choices for each chocolate! Red and white for darker chocolate and black for white chocolate. Your videos are just very pleasing to watch...

In Brazil almost 100% of desserts recipes we use condensed milk which gives an awesome flavor. It's also hard to see a recipe with gelatin. Different cultures. Yours look perfect too.

If I wanted to make this in a 9in pan would I double, triple, etc the recipe? Actually it's not about wanting to. I *need* to because I don't have that pan size. As for the gelatin. Can I use the powder form? Again, I don't have the sheets. Can you please answer my questions? I don't watch these videos just to view. I want to make what you're putting out but that's hard to do if I have questions yet they don't get answered. Thanks!

Of course you could substitute gelatin sheets with powder! I think you only need to dissolve them in a bowl of milk then add it into the mousse mixture :)

You'd have to do some math. I can give you an example. The person in the video uses a 15cm pan also known as a 6in mold. You want to use a 9in mold for this recipe. Ex: 6in mold -30g of sugar 9in mold - x amount of sugar You would cross multiply the 30 and 9 to get 270 then cross multiply the 6 and x which would leave you 6x = 270 You would then divide both sides by 6 to have the variable be by itself. 270 ÷ 6 = 45 You would need 45g of sugar. If you follow this rule you can find the measurements you need.

@@renr4853 that would be true if our pan was a straight line. Since our pan is a cylinder we have to calculate with volumes. Lets assume your pan Is 9 inches in diameter The one in the video 6 in in diameter And both your pan and the pan in the video are 4 inches high That makes the volume of the pan in the video 3^2*π*4~ 113 in^3 And your pan 4.5^2*π*4~ 255 in^3 And now you calculate 113 = 30 g 1 = 0.265 g 255 = 68 g That would mean that youd need about 68 g of gelatine and the ratio is about 2.26. so take all of the videos measurements and multiply by 2.26

Hi sorry to bother, but when you make the first layer of chocolate (the one who needs to rest 1 hour in the freezer - 9:31 in the video) how about the white chocolate layer? Doesn't it solidify too in one hour? I'd like to make this cake but I can't understand that step 🤔
