I marvel at how DonO's equipment remains as old school ghetto as possible, despite years of gear innovation in the homebrew market. Classic!

Good stuff fellows! Reminded me of some of the old videos y'all made that I watched before I stepped up from 1 to 5 gallon batches. Hadn't been able to brew in nearly a year due to serious unforeseen problems. Was able to cast a flyrod again for the first time in a like amount of time. Got my brewing gear nearly back in order and going brew some in the next week or so. Going to finish the modifications I'd started on a big ass pot/brew kettle that will expand the brews to 10+ gallons per batch capabilities. To quote a Paul Newman movie form the mid 80's. "I'm back"! "Have faith in the yeast".

Chip. That was awesome. Those action and contemplation scenes in the high tech brew room were fkn hilarious. For some reason the 3 of you kept reminding me of scenes out of “Spinal Tap”. Great stuff. Keep it going. Robert

If you can get to Saint Paul, MN, we will definitely make it happen. We could even get a big group of the krewe together for something like that. I know our good friend Ivar Geithung from Vossestrand area of Norway is also hoping to make it one day, but that will likely a few years off due the age of his kids. Seriously, let us know when all of this crisis passes if you really think you can make it.

After seeing this I had to brew it this past weekend. I can tell it's going to be amazing already. The third runnings came out at 1.040 and will be an english mild once it's done fermenting. Amazing stuff that Chevallier. Cheers to the Chop and Brew crew!
@ChopAndBrew
@ChopAndBrew 4 жыл бұрын
You used the Chevallier? What did you think of the color from just a single base malt... or did you add other malts?
@r3dd773
@r3dd773 4 жыл бұрын
@@ChopAndBrew I followed the recipe in the book and went straight Chevallier. It was maybe a bit darker than than say Maris Otter or Golden Promise. But not as dark as light Munich malt?

"An apocalyptic scenario (for the yeast)"- Mike Dawson (just like the rest of us are living in!) I'm gonna need one of these "year-in-the-making", "full brew day", "with tasting notes" videos from Chip and the gang twice a week starting next week.... Don't give me excuses, just give me results/videos. Well done, y'all.

I'm planning to make a 15 litre batch of something like this tomorrow, based on the recipe in the highly esteemed Dawson's book, with a few tweaks. I'll be shooting for a final ABV of about 11%, but it'll still be a Chevalier / Boadicea SMaSH. If I have time, perhaps I'll even try my first parti-gyle... I'll probably lie awake tonight, thinking about the logistics of the brew day.

I can’t in good conscious allow Aberlour 12 to be besmirched in such a way. Aberlour 12 is a speyside, so yes technically a highland but worth noting and also sees aging in Spanish sherry barrels (hence the double barrel). It’s probably 80/20 bourbon to sherry ratio since it’s more butterscotch and creme brûlée than matchsticks and dried fruit, but they’re both in there. Not a critique,l of the video, sick video, but these fools gatta know!
@Les2point0

It’s also unpeated. 0/3 DAWSON - you’re lucky your book is so killer (that alt tho) and I probably wouldn’t be half the homebrewer I am today without your guidance over the last decade.
