Great vid and nice to meet Mino. Would love future episodes to cover Mino's nutrient schedules and decoction processes... and any other of his brewing processes as the guy obviously has it dialled.

Great episode! Love that Mino gets his water from a natural spring so it doesn't have flouride in the beer!

Those beverages look ridiculously good. Interesting approach that he has. That's what's great about homebrewing. If someone wants to only make 5 things and perfect them, go for it. If someone else wants to experiment continuously, go for it. He's right - you have to enjoy your process, and I would also add, your results. If you got that going for you you're doing it right.

We might be able to do a chop episode with Mino as he is a huge foodie and great cook. He actually doesn't brew much anymore. But he's still a mad scientist about it!

That was really entertaining and informative. As a homebrewer who's only been at it for a year (about 20 batches at 3gal each, on the stovetop), it's encouraging to know that it's possible to dial-in that level of consistency. I know what I'm making is really good (I don't need anyone else to tell me that), and I'm not all over the map (almost exclusively IPAs with consistent grain bills and variable hops) ... but I'm still not so positive what I'm going to get each time I brew. I'll get there, soon enough. Anyway, keep up the great work!

Thanks Chip for having Mino Choi on. Mino, I currently live in MKE. My current household water is well, which I've had tested resulting in crazy high bicarbonates. I've grown tired of working with this water and was therefore, wondering where you go for spring water? Do you make adjustments? If so does your water supplier provide you a water report? Those propane cannons are useless. It doesn't scare away birds, and annoys the humans
