I'm sure this is good. But I live in Austin, TX, a hotbed (so to speak) of Mexican cuisine, and the best queso is Queso Flameado. It's made in an enameled cast iron chafing dish with chorizo, or with just cheese, or with rajas (strips of smoked, peeled Anahein chiles) and mild, white Mexican cheese, and broiled, not melted on the stovetop!
