The sausage with the ground beef was absolutely delectable. The sausage really gave the dish an extra somethin. My 97 year old mother raved about it too! Everyone should try it. This recipe is a keeper. Thank you Laura for sharing it.

As much as I LOVE chili, I honestly, never thought I could or would make my own, but I believe I'm gonna have to try your recipe. It's looks BANGIN!! I esp appreciate how you explain why you use certain ingredients, when to put them in, how you let the chili sit for a bit between layers of ingredients, so when all the ingredients are finally together and cook for few hours, the end result is just DEEE-LI-CIOUS!!! We just made this. It was honestly the best chili we’ve ever had! We used breakfast sausage instead of Italian. Ended up with a subtle sweet flavor we loved!

Hi Laura, I just made your chili recipe. It’s still on stove but it’s awesome already! I made a few medications such as adding a poblano along w/2 jalapeños from my garden. I only used ground beef bc no sausage on hand. Love the spice combo and addition of beef broth and lager (I used Sam Adams 👍) and about a tsp of chipotle chili powder. I’d like my chances in a chili cook off with this!

I made this today. I used a little cayenne instead of the Jalapeno and 3/4 cup red wine instead of lager and cannellini beans instead of kidney. Not a big difference but this was THE BEST CHILI I HAVE EVER HAD!!!

I’ve been told I make good chili. Two ingredients that believe are difference makers. First, I freeze fresh sweet corn off the cob from the fall harvest and use that. Second, and this is the most important, a large spoonful of peanut butter.

Another good video, thanks Laura. I recently made a big batch of your chicken chili and basically lived on the stuff for a week, it was that good. I also added two fresh Jalapeños - spicy good but not over the top. I agree - leave out the bell peppers. I’ll bet we would enjoy your take on Texas Chili (with brisket) as well.

Do you think there's some kind of difference in removing the cooked meat with a slotted spoon then sauteing your onions and garlic in the rendered fat? I realize I may be splitting hairs but my goal is to not overcook the meat yet get that flavor into the O&G.

I was thinking the same....the meat looked dry by the time she added the spices. I also follow Jenn Segal on "Once Upon a Chef." She suggests adding baking soda to the meat and using the slotted spoon method you suggested. The baking soda raises the pH of the meat, helping to lock in moisture and keep the beef tender. Not criticizing Laura...God knows how much I love her...but, if you can improve on something, why not? 🙂

Looks delicious, I like it better the next day, the flavors are more alive, also my Grandmother sometimes made mashed potatoes and put a few spoons of it on the bottom of the bowl, and put the chili on top, it’s good that way to. 👍❤️🦋
